The sugar is optional. I used to do this all the time except I would flip the entire omelet then add whatever (diced ham, cheeses, etc.) cover for about one minute and fold the omelet over the filling. Really nice.
Tried to make it today and it's amazing😊 But if you're using a lot of eggs (I used 8) I recommend to roll it into a tube, just to make everything easier. Thank you for the great recipe🙂

I learnt this recipe 54 years ago without the sugar and before folding finish cooking the top under a grill for 1 to 2 minutes and then fold out onto plate. Also you can add a filling as you plate. Cooked mushrooms works well.
I just watched a guy make a dessert with whipped egg whites. I’ve whipped thousands of egg whites in my life. But I’ve never even considered what would happen if you mixed them back into the eggs for scrambled eggs or an omelet. Seeing that dessert being made immediately made me look for my idea on TH-cam. I’m so glad someone has a video of it.
If you use the same recipe, but instead add in fruit flavoring and Whipcream, then freezes it and it makes the most delicious soft icecream! :D Gotta try this souffle version, looks delicious!

This is one of the first recipes i have made when i finally learned how to cook. When my mother tasted my egg souffle, she said that it's texture is similar to pancakes, i like cooking this recipe and I'd rather not add sugar in them since i prefer my egg savory rather than sweet
I was looking for a comment that used salt instead of sugar. I like mine savory also. I was wondering if it would still be fluffy if I add salt and onions, because that's the way I love mine, also with a little sesame oil. I learned to make Korean steamed eggs with a little sesame oil for garnish and now I'm hooked on making new egg dishes since I love eggs so much.
@@ddeleon2919 Add the sesame oil on top after, not to the egg whites, as too much oil will deflate them. You can add onions if you want but they won't really be touching the pan so cook those first before you add them to the egg at the end. The sugar will help stabilize the egg whites, it isn't for sweetness, but it can be skipped if you don't mind a slightly less fluffy or more delicate structure

I've made these without sugar - "extremely fluffy" is the best description I can give. The preparation method changes nothing about the flavor of the egg though.

@@clay7214 No - never tried it with sugar. Honestly the only thing that really changes is the texture; the flavor is the same as with a standard omelet. I've never put sugar directly in my eggs either, but I've had things with sugar in it (like ham) in an omelet before - I assume the effect is similar. It's worth making at least once - you may find the extra effort worth it if you enjoyed the difference in texture.
I had this with the sugar and it shocked me when I ate it. I tried putting ketchup on it to see if it helped the egg and I just couldn't eat the rest. What I am saying here is that I DEFINITELY need to try this WITHOUT SUGAR!!!!

The trick is bubble. See those small bubbles after she beat the egg white? Basically frying egg bubble cream, when it still in bubble form and solidify by heat- it stays micro hollow like sponge. That's the core of this menu. edit - change the word "white" quick typo lmao
GENTLY fold the egg yolks into the beaten egg whites. The fat in the egg yolks break down the bubbles. Also after you GENTLY fold the egg yolks in start cooking it right away. Yes, it is a very bad moment to take a phone call.

Suggest to stir egg white longer enough as the video shows, maybe 5-10 minutes continuous stirring. If the white hasn’t been stirring sufficient as he asked, the middle of puff will collapse easily and failed this dish as I did lol.

Back in 1965 in the UK I was a youngster with my parents on holiday somewhere in devon and we were served scrambled eggs just like this, for breakfast, they were just georgeous, so fluffy, and I often wondered how they were made. I have had scrambled eggs hundreds of times since, but, they have always been on the rubbery side and never so fluffy and nice. So, After all these years wondering how they were made you have explained the way to make them. I am going to make scrambled eggs your way for my grandsons and see if they are equally impressed.

But recently, which is yesterday, I have been feeling this feeling towards cooking and today I made this Souffle Omelette and DAAAMNN. It was SOOO GOOODDD. I LOVED IT! i once tried a recipe that looks pretty similar to this one, heres what i did: separate egg white and yolk, put a little salt in the white and a tablespoon of sugar in the yolk, beat the white until it had the texture similar to the one in this video, then i put some orange juice in the egg white and gently mixed it, then i put it in a pan and covered it, when the fist side was cooked, i turned it then poured the yolk on the cooked part of the egg (it will cook with the heat of the egg), and i enjoyed my meal

I am sooper lazyy when it comes to cooking. I don't go anywhere near it. Never felt any interest towards it. But recently, which is yesterday, I have been feeling this feeling towards cooking and today I made this Souffle Omelette and DAAAMNN. It was SOOO GOOODDD. I LOVED IT! i once tried a recipe that looks pretty similar to this one, heres what i did:
separate egg white and yolk, put a little salt in the white and a tablespoon of sugar in the yolk, beat the white until it had the texture similar to the one in this video, then i put some orange juice in the egg white and gently mixed it, then i put it in a pan and covered it, when the fist side was cooked, i turned it then poured the yolk on the cooked part of the egg (it will cook with the heat of the egg), and i enjoyed my meal
I tried to whip it for nearly an hour and it never got stiff

Not sure, but maybe the temperature or the speed of whisk. Use a kitchen machine for better results
maybe a little bit of yolk got into the whites, or try putting salt in the whites instead of the yolk

Just to be clear, since it's an "Omelette"-souffle, would it be ok if I tried adding some fish oil to the mix, or any other asian sauce? Or would it ruin the fluffiness?
i live in brazil, and my grandma cook just like this and put meat, chicken, even some salad like tomatoes. It tates good anyways!
