If we have e sim tecnolgy we cannot remove e sim easily it will be removed from the settings or when you fatory dat reset it will be removed automatically.
If we have physical sim also every thef may not have pin to open sim tool he will be in hurry and he will run and first tries to do this stems so in 5 to 10 minutes gap you can catch him.
