- How to Can Peaches in a Water Bath Canner Using the Hot Pack Method
I show how to can peaches using the Hot Pack Method and water bath canning. This is just the way I do it and have done it for several years. Peaches can also be raw packed but I find the hot pack method yields a better result. I used the Ball FreshTECH electric water bath canner but this works for a traditional water bath canner also. If you have never canned before, please refer to the sites I've listed below!

I ate canned tomatoes that I did after three years in the cellar. They were the best tomatoes I have ever had the pleasure of eating.

Here is a nifty tip...the screw rings around the top of the jar are your liquid depth indicators. The top one is 1/4", next one down 1/2" and the one that is solid and goes around the jar is 1" head space. There is a faint line just below that and that's the line you use when canning pie fillings. I'm not an expert by any means and you should 100% always refer to your canning books because I always do to double check recipe recommendations. Also, I like to watch at least 4 to 5 videos based on the thing I'm canning to get recipe ideas or catch a tidbit of information that may have not been relayed in a prior video but again your canning guide is helpful should you have any doubts. I was always curious how the peaches would get pilled. You explain everything so well. I love all the aqua real color you have. You have very cool kitchen gadgets. Would love to learn how to can so I can peaches, salsa, and marinara sauce. I bet you also save so much money making yourself.
I really enjoy canning and need to do more than I do. It is a really satisfying thing to put food away that you processed yourself. It is really pretty easy too, just pretty time consuming! I have done marinara sauce a few years ago and it was yummy! I've never done salsa but that sounds like something that would be fun to try! And I feel like I save money which is a nice thing too! @@CrystalEvans I freeze things too but it is more convenient to can and store in mason jars. And it lasts for such a long time too! I have canned things from at least 5 years ago that are still perfectly fine!

Hi Wendy! No, I don't have a peach tree, I just buy them from an orchard every year. I used to can other things but got down to mostly just peaches since they are what I love the most! Use Freestone peaches they peel super easy..dont need blanching.
These were free stone. I think they might have needed to ripen a touch more because that skin didn't want to come off. I was impatient to get them done though and didn't want to wait! Lol Thanks for watching!

As a general rule, home canned foods have a shelf life of 1-2 years. You should store them in a cool dark place for best results.

I just canned my peaches following your video! Thank you so much. I believe I did not tighten two of the kids enough. I can smell the juices and when I pushed the lid down to sop up the water; juices came out. Does that mean all my other jars are not good?
Hi Debbie, I can smell the juices when I can mine too, and juices will come out during the canning process. As long as they are completely sealed, they are fine. I let mine sit for several hours to fully cool before I touch them or move them around and then I do a seal check. To tell whether it is sealed, the lid should not spring back up when you press down on the middle of it. Hope that helps!

What size of jars did you use and what would be the right measurements for 14 jars
I used quart sized jars. A rough estimate is 2 1/2 pounds of peaches per quart. Thanks for watching!
Hi Alicia, I tried my first waterbath canning last night. When they were done processing and I lifted the lid, some of the juice came out. The lids still sealed but I wasn't sure if that was normal. After watching your video, one step I did miss was to let them sit for a few minutes in the canner before removing them. Would that be enough to cause this to happen? Thanks
It doesn't sound like it is a problem. The jars will leak during the processing which is normal. I always wash down my jars (after letting them sit overnight) to get that cleaned off, otherwise they can be sticky from that leakage. As long as the nipple on the jar lid is still down and the jars are sealed, you should be fine! I hope that answered your question, thanks for watching!

You are right though, if you let the cans sit in the canner for about 5 minutes you will get less juice coming out (this is called siphoning). The other thing I do is to lift the rack and hook it on the side of the canner so the jars are still part way in the water for another 5 minutes. As long as they seal they should be good, though the peaches above the liquid are more prone to discoloration over time. Congrats on your first canning session!
