I'm only part way through the video so hopefully this comment doesn't become redundant.... but couldn't you just dog the whole area out in a big rectangle and have the minecart travel around? Even though it would be travelling under areas that aren't under the sniffers or would still be more efficient than using a million hoppers/minecarts.
That's a fair point! I think i got so focused on not having unused spaces where the sniffers wouldnt be going that i didnt think that route, but good thought, ty!

2:20:00 - The difference between Enderman griefing your stuff, and Creepers blowing stuff up is that with Endermen, it's just because they exist. You don't have to interact with them to ruin your builds, there's no gameplay. You just come back from a thing and your build's been messed with. With Creepers, you have to be close enough for them to activate *and* you also have to fail at stopping them. There's gameplay there, simple, but at least if it blows up I know I could have done better or something.
