- A relative clause gives more information about someone or something.
Some relative clauses refer to a whole sentence. Some relative clauses refer to a noun. There are two kinds of relative clauses that refer to a noun: defining and non-defining.
Defining relative clauses give information that is necessary in order to understand who or what is being referred to.
Non-defining relative clauses give extra information that is not necessary in order to understand who or what is being referred to.

if relative clauses can refer to nouns and sentences, wouldn't one of the first two examples be an example of a relative clause refer to a sentence? the one that says "we watched a movie last night that was really interesting" and if not, how can I know when the relative clause refers to a whole sentence?
In the example you're referring to, it was the movie that was really interesting, not the experience of watching a movie last night.
To help illustrate this, consider the difference between that sentence and this: 'We went to the cinema last night which was a really interesting experience.' In this sentence, the relative clause doesn't refer to the movie (a noun), but refers to the whole clause 'We went to the cinema last night.'
