Also, there's one dimsum vendor on Nguyễn Thời Trung St. (D5) that has great ca dé sold at 50k each box as well. I've bought their ca dé several times. You can check it out some time then ;))

Growing up in the US in the 90s my mom made banhmi ga cau ( I can’t spell in Vietnamese) but it’s boiled fish like what you had but not in a red sauce, but in soy and fish sauce . It was my fav, since we didn’t love the newer style of Viet sandwiches that were more from Chinese or chain stores like Lee’s. The original Viet cafes were less available as the years went by.

Call Kebab banh mi is not wrong, kebab is the style of grilling the meat not the actual bread themself. The Kebab bread in Vietnam is the same type of dough that was using for Banh Mi.

you should check out the whole sausage banh mi at 151 Truong Ding Street, District 3 its the same banh mi style as the kebab in this vid but a bit more upscaled

Ca dé is similiar to kaya in term of cooking and ingredients (egg, coconut cream, sugar, flour). However, the name came from the Chinese pronunciation as Ka ye. Custard doesn’t include coconut cream. So it started first in Hainan province in China and then spread to other neighbouring countries as the Chinese migrated.
I was also shocked you put the jerk-style chicken banh mi on the top tier...to me, that would be a couple of tiers lower than all the grilled stuff. As far as that last banh mi, I mean, technically, the word banh mi means bread. Sadly the word bread and the word for sandwich with a baguette are the same...which is common in the Vietnamese sandwich (e.g. think of the word com which means rice, but can also mean a meal/food). I think had they just made the bread for the kebab sandwich in the shape of a flat baguette, it would have been more "acceptable' as a banh mi.
I dont think that’s popular to the south 😂 I asked my friends before and all of them doesn’t know what is it and more refer back to me with “Bánh Mì Bò Kho”. I’m from Nghe An so yes I love “Sốt Vang” and they are completely to “Bò Kho” 🥹

Curry is a common dish in Vietnam as well. It is just not that popular like other soups. Probably beause not many people want to eat curry everyday, and thus less sellers. We normally cook curry at home occasionally with bread or rice vermicelli.
