I believe his left hand is working the stop knobs, which in nearly all street organs, work just like stop knobs in a regular hand played pipe organ: to turn on a rank (set) of pipes, the knob is pulled out; to turn it off, the knob is pushed in. I don’t know the exact disposition and scale of this Odin street organ except it has 42 notes and is fully chromatic. I don’t think there are any automatic registers/stops controlled by the book, so all stop changing must be done manually, like in most other hand turned small street organs with stops. From the video it appears that this organ has all flute type pipes including stopped flutes, open flutes, and brass piccolos, so I presume the stops are for the open flutes and piccolos to change the timbre in the melody and also change the octave register (since it is typical for additional ranks to add an octave (known as 4’ pitch), or even two (known as 2’ pitch) above the basic unison pitch (known as 8’ pitch).
