Ingredients:
- 1 tsp onion powder
- ½ cup thinly sliced shallots
- 1 tablespoon minced garlic
- 1 tablespoon minced peeled fresh ginger (or 1 tsp ground ginger)
- 1 32-oz carton of chicken broth
- 1 can of coconut milk
- 2 teaspoon salt
- ¼ teaspoon ground red pepper
- 2 (32-ounce) packages of fresh cubed butternut squash
- 1 tablespoon fresh lime juice
- Ground red pepper (optional)
- Cilantro leaves (optional)
Instructions:
- Add everything into your crockpot but the coconut milk.
- Cook on high for 4-6 hours.
- Then use an immersion blender to puree your soup, as you add in the coconut milk.
- Top with chopped-up bacon, pumpkin seeds, or whatever you’d like!

Hi Holly, this is by far one of my favorite soups for the fall I can't get enough of it! I also add a little nutmeg to my version just makes it seem “fall like”

Making the soup for tonight. Omitted the onion powder with 1 whole diced onion and added fresh sprigs of thyme.
Used homemade veggie broth from my veggie scraps bags in the deep freeze.

I was so happy at first because I thought it said butterscotch soup, but then I shortly learned that it was butter squash. I'll still try it, it looks good.
Great idea on using pre-chopped squash!! I’ve been wanting to make squash soup but am too lazy to do it from scratch.
