Very cool! And that's one of the many reasons why I love your style because I rarely see you use fondant, it's great for aesthetics in some cases but not wanted all the time for taste.

I just loved this one Nick! I can't stand fondant, it's just too sugary or heavy to me. Buttercream is way tastier. Here in Mexico we are more used to meringue ( classic swiss or italian or french, no butter nor powder sugar at all) This is such a great option. Loved it! 😘🇲🇽

Brix Perez here in Mexico people are used to whipping cream. Meringue alone doesn’t hold for cakes, specially in warm weather.
Buttercream is fantastic, but again, not the best for decoration and neat cakes in warm weather.
pandane ok... You are probably talking about those mass-produced factory- type cakes they sell in big supermarkets. I was talking about those delicious homemade tres leches cakes with floral meringue our neighbors or moms/ grannies make for us. You know? I live in Tabasco where WARM is not even a word. We have scalding hot weather here. And before all the american technique (buttercream, fondant, etc ) showed up, EL MERENGUE DE CLARAS was all we knew.
