  • Let me show you how to make Chicken, Chinese style, with 3 of my favorite recipes: Cola Chicken Wings (可乐鸡翅), Three Cup Chicken (三杯鸡) and Kung Pau Chicken (宫保鸡丁).

    500g chicken wings, in halves
    5-10 slices of ginger
    1/2 can of cola
    2 Tbsp soy sauce
    toasted sesame seeds for finishing
    ► Recipe: Three Cup Chicken (三杯鸡)
    400g chicken thighs, deboned
    2 Tbsp dark soy sauce
    1 tsp light soy sauce
    2 Tbsp Chinese cooking wine
    1 Tbsp oyster sauce
    1 Tbsp sugar
    pinch of white pepper
    1,5 Tbsp vegetable oil
    1,5 Tbsp toasted sesame oil
    10 slices of ginger
    5 cloves of garlic, crushed
    1 handful Thai basil leaves
    fresh red chili to taste
    ► Recipe: Kung Pau Chicken (宫保鸡丁)
    400g chicken breast
    2 tsp Chinese cooking wine
    1/2 tsp starch
    1/2 tsp light soy sauce
    pinch of salt & sugar
    1/2 Tbsp dark soy sauce
    1 tsp light soy sauce
    1/2 Tbsp Chinese cooking wine
    1,5 Tbsp Chinese dark vinegar
    1 Tbsp maple syrup, honey or sugar
    1/2 tsp starch
    2 tsp ginger juice
    1 Tbsp Sichuan peppercorns
    5 cloves garlic, chopped
    5 dried chilis, in chunks
    1 tsp fermented chili & bean paste (doubanjiang, 豆瓣酱)
    1 cup spring onion, roughly diced
    1/2 cup roasted peanuts
    1/2 cup cucumber, deseeded and diced

    As long as I know, basil are used in Guangdong (especially Chaoshan), where they called them 金不换(Jin Bu Huan). My mother used to cook with them as essential spices for seafood.

    My family is Hakka Chinese, we use Thai basil in our cooking. The Hakka Thunder Tea (擂茶)has Thai basil in it too.

    Basil is not common in Chinese cuisine, but used frequently in certain areas with different names. For example, in Henan province, people call it "Jing Jie"(荆芥) and eat directly with noodles, or use it to make one of your favorite Chinese cold dishes (Pai Huang Gua 拍黄瓜). In Chaozhou-Shantou area(Guangdong Province), its name becomes to "Jin Bu Huan"(金不换) for fried shellfish.
    But anyway, you are better at making Chinese food than most Chinese! Andong你的厨艺太棒了!

    Despite my growing up in northern China, Kung Pao chicken has always been my constant go-to dish at any restaurant. There are a lot of variations of this classic Szechuan dish( Szechuan style, Lu style, Xiang style ), but yours looks exactly the same as some of the chicken I had in some down-to-earth Beijing food places. Bravo!

    Fun fact, I just did that for my dinner with chicken, onions, sprouts, vegetables and mushrooms, poured on top of steaming rice. It's a wonderful recipe for a one-pot-wonder which takes only 8-10 mins. Putting on the lid for 15mins will give you overcooked chicken

    I usually use whole free-range chicken for Three Cup Chicken and thighs for Kung Pau but darn it these have been the top 3 three chicken dishes I've made for my family for a long time.

    你可以试一下,下次做三杯鸡的时候,倒油之后先把一半的九层塔放入,并炸酥之后乘出,之后再用炸过九层塔的油继续烹饪。等料理做好之后再把炸酥的九层塔洒在上边。我想这么做会增加一层口感,应该会挺好吃的…

    Dein bestes Video-Konzept finde ich! Fände eine weitere Episode mit Tofu interessant, da ich leider kein Gericht kenne was mich da wirklich anspricht.
    Mach weiter so - finde es cool zu sehen wie du bei jedem neuen Video paar tausend Abos mehr hast. :)

      @@mynameisandong Tofu fände ich auch super, bloß da müsste man schon bei der richtigen Auswahl beginnen. Diejenigen in der BBQ Szene zB haben einfach die erstbesten vom Discounter geholt (und dann darüber geschimpft 🤪) OK der vom Lidl ist meiner Meinung nach einigermaßen OK, aber meistens sind das schrecklich bröselige, nach Karton schmeckende Widerwärtlinge. Du müsstest da wirklich ganz von vorne anfangen. Vllt sogar einen Block mal selbst machen, damit die Leute überhaupt eine Vorstellung bekommen, was das eigentlich ist. LG, Sascha aus Kelheim /Niederbayern

      Ohja, Tofu wäre der Hammer...ich versuch mich ab und zu vegan zu ernähren^^' und hab bisher nur schlechte Erfahrungen mit Soja-Produkten gemacht...Seitan soll ja besser sein, aber ich würd echt gern mal nen Video haben, wo jemand Tofu oder Seitan so zubereitet, dass es geil schmeckt. Hab bisher nur Rezepte gefunden, die entweder extrem aufwändig waren oder nicht geschmeckt haben. Klar wirds hier nicht super easy von der Zubereitung bei diesem hochqualitativen Kanal xd Aber solang es schmeckt :D

    Love your personal twist on Kung Pau chicken! Sichuan cuisine is popular but is often localised (or rather, not as authentic as what it original is), but you've successfully replicated the key steps to create the 'Kung Pau' taste, aka the 'lychee flavour' which focused on the sweet and acid balance. Some may feel the addition of cucumber or celtuce inauthentic but I like how it adds another layer of complexity of texture to the contrast between roasted peanuts and chicken. Also, marinating chicken breast cubes with starch and giving them a quick fry help to secure the meat's juiciness too! It's such a useful technique!

    My favorite Chinese chicken dish is absolutely Large-plate Chicken (大盘鸡Da Pan Ji). This dish originated from Xinjiang Autonomous Region is super popular around the whole country. Eating the thick handmade noodles stirred with the soup in the plate is really an enjoyment!

    Basil are actually every common ingredient in Taiwan, Fujian and Chaozhou area. Its usually used when cocking with different kind of seafood, especially shell fish.

    The Chaoshan region of Guangdong uses basil a lot for cooking. And maybe surrounding areas including Fujian and elsewhere in Guangdong also use them. Basil is a tropical plant so it might not grow well in northern part of China.

    Oyster Sauce is a best kept secret!!!!! Thick - gooey - Flavorful. Fish sauce goes good with this.

    Impressed! Two tips: baking the dry chill pepper until it is dark--the fragrance of chill actually is from the toasted seeds of chill .perhaps put it to the wok before the Sichuan pepper corns. And DO NOT use any chill bean paste at all. That is is the traditional recipe.

    For the Kung Pau - have a go at swapping the maple syrup for molasses; its got a more bitter sweet flavour & the colour it adds is glorious.

    Basil were not used in Chinese cooking?? Basil is called 九層塔 (nine tiers tower) in Taiwan, 金不換 (more valuable then gold) or 滿園香 (fill the garden with aroma) in southeast China, and 蘭香 (orchids aroma) at ancient time. farming and using of basil were already been recorded in ancient Chinese agriculture book Qi Min Yao Shu (544 CE), medical book Qian Jin Yao Fang (652 CE), Jia You Ben Cao (1060 CE), Ben Cao Hui Yan (1624 CE), and food/herb guide Yin Shan Zheng Yao (1330 CE). Basil is used both as cooking herb and medical herb in China.

      Thai basil is not really used in Han Chinese cooking, but the Dai minority in Yunnan and the Zhuang in Guangxi do use it

      Bishesh Sherchan pretty sure he ment nine Tiers tower, which westerners call Thai basil, it true I haven’t seen it used much in Chinese cuisine (Hans) except in Taiwan. Just because there are ancient records of it being used, doesn’t mean that the majority of Chinese use this plant in their dishes, even in mainland when they use it, its to cook three cup chicken most of the time(considered a taiwanesendish,no political intended here),. And the Dai minority mentioned in the above comment, is in yunnan Provence, right next to Thailand. The word dai and Thai are almost the same word, 傣 and 泰(kinda like Texas and Mexico)。so it’s not surprising that the dai have that in their cuisine, actually, they use a lot of the same spices, lemon grass, basil, lemon lime etc. as for Zhuang in guangxi, I have no idea what it’s like.

    don't wanna pretend the smart ass here but i just wanna point out that when it comes to thai basil in chinese cooking it seems like they indeed partially do. here's my source: flavorful origins s1, ep18 at 4 min. how ever like ur vids & tasty recipes keep up the good work
