Lau Chingudi || Odia Prawn-BottleGourd Dish || उड़ीसा का लौकी झींगा की सब्ज़ी

    The flavours of prawns and bottle gourd goes unmistakably well in this popular Odia dish. The tempering of panch phutana and garlic, in this mildly spiced dish, and full of nutrients sucj as fibers, vitamin C and antioxidant, make this a healthy and delicious accompaniment im any odia spread.

    Ingredients-
    Bottle Gourd (cubed)
    लौकी
    1 med sized
    Small Prawns
    झींगा
    1/2kg
    Panch phutana
    पंच फोरण
    1.5 tsp
    Tomatoes (chopped)
    टमाटर
    2 nos
    Dry red chillies
    सूखी लाल मिर्च
    3 nos
    Garlic (crushed)
    लहसुन
    2 tsp
    Salt
    नमक
    To taste
    Turmeric
    हल्दी
    1/2 tsp
    Mustard oil
    सरसो का तेल
    2 tsp+2 tsp
    Procedure
    Take prawns in a bowl
    एक बाउल में झींगा लें
    Marinate properly with salt and turmeric.
    हल्दी और नमक डालकर मिलाएं
    Heat mustard oil in a pan
    तेल को गरम करें
    Add the prawns
    झींगा डाले
    Sautè till it changes to a reddish colour
    रंग बदलने तक चलाते रहें
    Transfer to a plate and keep aside.
    अलग निकाल के रख लें
    In the same pan add some more oil
    थोड़ा और तेल डालें
    Add dry red chillies
    लाल मिर्च डालें
    Add panch phoron
    पंच फोरन डालें
    Add crushed garlic
    कुटा हुआ लहसुन डालें
    Sautè for a minute.
    एक मिनिट तक भून लें
    Add chopped tomatoes
    कटा हुआ टमाटर डाल दें
    Add salt to taste
    नमक डालें
    Cover and cook for 5 mins
    ढक कर ५ मिनिट पकाएं
    Mash the tomatoes slightly
    टमाटर को हल्का हल्का मसल दीजिए
    Add the bottle gourd
    लौकी डाल दें
    Cover and cook for 10-20 mins till bottle gourd is half cooked.
    लौकी आधा पकने तक ढक दें
    Take 5-7 sautèed prawns, crush them
    थोड़ा झींगा मसल दीजिए
    Put it back with the rest of the prawns
    वापस प्लेट में डाल दें
    Add all the prawns to the cooking bottle gourd
    लौकी में झींगा मिलाइए
    cover and simmer for 5 mins
    ५ मिनट ढक कर रखें
    Cook on high flame till and moisture evaporates.
    तेज़ आंच पर पानी सूखने तक पका लें
