Easy to make food by using everyday items that can be found at any supermarket. That's what makes Jacques the best TV chef. I'm so sick of the Food Network clowns who make their shows about themselves and not the food. He understands that most of us don't cook that much or at all and he simplifies the recipes to make it easy for anyone to do.
At one point he's cutting a damn clove of garlic and he doesn't even need to look at it. It's fun to watch Jacques, he's such a master at what he does.
Jacques has a lot of respect for woman: he mentions, his mother, wife, daughter and grand daughter plus good friend Julia. He mentions these people often in his videos,.
Best pizza I ever had was Tony's pizza in Hanau Germany. Tony was Italian and I started hanging out there at 16. I was there so much that when my friends spilled beer at our table they would tell me I knew where the mop was. Lol.😊
I love to cook. My first serious cookbooks were Mastering the Art of French Cooking,, Volumes I and II. The originals, not the boxed set. My family is of French origin. Everyone in my family cooks delicious creative food, although they may have degrees in subjects not related to food. I have lived in Berlin for 30 years, but before that, I lived on the French border where I got married. My new husband and I went to Alsace every other week-end, where we had some really good French friends. His accent was exactly like Jacques', the melody of French carried directly into his English, "You know..." I am "staying in" now and almost every day I talk to my sister in Minnesota, who is a professional baker. When I told her I was watching Jacques, she said, "Oh good! I'm so glad you are doing that. It's good for your spirits." Not that I'm depressed! But she is so right. I carefully record the details of his methods, and have "More Fast Food My Way" in my Amazon basket. I'm so sorry for his loss of his Gloria, who he thinks about with every deft detail, how she likes turkey wings, and likes her pasta well-done. What a terrible year! On his many shows, though, he's timeless, and clever and produces fabulous food. I have to keep reminding myself that he has a Master's Degree in French Literature from Columbia University... He has mastery at more than the one thing... He's a man of all seasons.In this time, he's a Godsend!

I used to live near Seattle and liked The Frugal Gourmet as he was located in the region. It was unfortunate what came out about him but his show was good and I have two of his cookbooks and the are really good.

And maybe some of today's TV chefs can watch too & take note: this chef (N.B.: he's a master of *teaching* as much as chef- ing) doesn't just pass along recipes as you do, he teaches us all *how* to cook, very subtly, so we're not even aware all we're learning as we watch. And five years from now when a crowd gets stuck at your house after a freak snowstorm hits, you'll remember as you pull out something -anything!- from your pantry to feed them that Jacques told you to forget the nonsense about serving raw pasta, cook it just *past* the moment the chewy line dissipates instead, & your shivering refugees will thank you.
Pepin is such a treasure. An improvement on the first dish is to use Iberian ham instead of prosciutto. It’s another experience altogether. Also, paella is not made with chorizo. I understand why some people would like it but it would overwhelm the dish itself. Chorizo on a pizza, on the other hand, is a great idea.
Great series! These recipes are simple enough even for me to understand and prepare. Fresh/healthy ingredients, most of which are available in the neighborhood market. Thanks for posting these episodes for us to enjoy my friend, Semper Fidelis!
I made that pizza with some friends a while back...granted, chorizo, garlic, and about a couple of pounds of cheese are hard to mess up, but it was seriously one of the best pizzas we've had. The only modification we made was upping the garlic (we take all garlic amounts in recipes as "this is just a starting point," so we probably ended up using 6-8 cloves and wanting more).
yeah, he isnt as well known as the british and american tv chefs but this makes it better, we are the few lucky ones who know how amazing and legenadry pepin is

He was in a car crash that damaged one of his arms so much that he had to leave the kitchen, he reinvented himself as an educator and author and the rest is history.
Ok, I am so tripped out right now. I have all the ingredients to the pasta dish but I would have never thought to put all that together! Everything was wonderful even the tart! So easy and faster then a mix.

I learned in a restaurant kitchen, to cut peppers from the inside, never from skin side. To prevent knife from slipping. I guess his are always sharp.
