Very well done Chef Gaspard. Believe it or not I've always done my Turkey just as you've just shown. However, to the spice blend, I always add 2 TBSP of Haïtian Épis because that's how my grandmother taught me to do it and also some freshly squeezed orange juice (1/4 cup). So delish. I didn't know about the glaze nor the bacon on top, which I'm so looking forward to incorporate this year. You're so right when you say "some white people" do not know how to season their meats, especially their Turkey for it's always yucky, but never wanting to hurt anyone's feelings, I invited some of my friends over for Thanksgiving once and they've been sharing Thanksgiving with us for 6 years now and have a wonderful time. Thank you ever so much for sharing that it wasn't just my granny who made Turkey like you've just done. I'm heading to the Supermarket early in the morning to purchase the ingredients for the glaze. I remember years ago I was looking for a model Thanksgiving turkey online, they just washed the turkey under the sink with cold water added salt, get it ready for the oven, I never finished washing them, because I'm haitian i know how to season meats.
Nowadays my turkey will taste better than ever .
