To me it always seems that the background voices are playback, it sounds like on their albums - I loved the Eurovision version of Hard Rock Hallelujah for example, but why don't they do these live backgrounds in their normal live shows or if there are voices on their albums, why don't they sing live but sound like records?

Of course live version sounds same as the record because they have notes that they play.
Only hip hop music sounds different live.
if you're talking about backing vocals live then they would have to bring in a choir on stage depending on how it was recorded in the studio
