It all seems a bit out of control. The horses are going too fast and the wheels on the digger cant keep up with the load and are skidding along the ground causing it to probably miss a lot of the row and damaging an amount of the crop. why not pull it with one horse.? Also make a side arm which would hold a sheet that would act as a screen and stop the potatoes flying all over the place

The have to go fast to get the spin needed for the machine to work well. There is a cutter under the spinning part that scoops the potatoes out of the ground, you can see it on the turn and the return trip. They likely do miss some of the crop but potatoes don't really grow all that deep so likely they don't miss much. That is why you hill them so they can grow, not go green (which makes them somewhat poisonous to eat) and be shallow enough to be easily harvested. Using horses, if you have a load that is say 1/2 or more of the horses capacity to pull, that will wear the horse out quickly, in a few hours or less. If you have a load shared so it is not much compared to the capacity of the horse, then the horse can work like it is basically walking all day and not be nearly as fatigued, less likely to get hurt and will maintain condition with less feed. Basically, it's the old axiom of many hands (or hooves in this case) makes for light work. The potatoes flying means they don't hit each other and bruising is a major cause of loss of crop in potato harvesting. It's so important that modern science designed an artificial potato to monitor and track conditions in equipment and industry to reduce the amount of hard impacts and bruising a potato experiences and thus reducing the loss of potatoes to rot from bruising. Hope this helps.
