  • Claire Saffitz Makes The Perfect Blueberry Buckle | Dessert Person
    One of Claire's favorite things about summer is spending time on Cape Cod with her family and eating her mom’s blueberry buckle. It’s a Martha Stewart recipe from many years ago, and it was her introduction to buckles, a category of streusel-topped cakes that incorporate lots of fruit. What Claire loves about Martha’s recipe is that it’s almost more fruit than cake, featuring clusters of berries barely held together by a tender batter. She wanted to create a similar blueberry buckle that incorporated the flavors and textures of corn, since corn and blueberries are natural partners. Claire does this two ways: First, crushed cornflakes are mixed into the streusel topping, contributing a light and satisfying crunch, and second, cornmeal is added to the batter, providing some textural contrast against the soft berries. Follow along with Claire Saffitz and serve the buckle with vanilla ice cream for dessert and then enjoy again for breakfast the next morning.

    My mom has made a version of this every summer since my brother and I were little! As kids my brother and I called this blueberry bunkle - as adults (26 and 28 respectively) we found out LAST YEAR that this is actually called a buckle. When we brought it up to my mom she said it was just "too cute" to correct. Blueberry bunkle for life!

    What Claire said about blueberry desserts needing more salt makes so much sense. I like blueberry desserts but always felt like baked goods with blueberries had a slight blandness. Now I know!

    Felix truly came into his own today and stole the show 😆! I'll admit I was astonished at the amount of blueberries going in, but the streusel was so generous, it helped balance out the fruit nicely. Well done, Claire. Respectfully, Felix needs his own show... 😁

    I was about to ask where's the measurements but then someone in the comments pointed out that it's in the very beginning of the video roughly at the 0:44 mark. Comes and goes pretty quick so you have to pause at the right time.

    I just got your book and believe it or not this was the first recipe I tried! I did halve it and used a smaller pan (something like a 7-inch) and that worked well! It was so yummy and I could put to use the wild blueberries we picked last summer. Love the new book, beautiful pictures and impeccable descriptions ❤

    I have made this several times now, once as a birthday cake. So good it's addictive. The cornflakes make it almost sweet and savory tasting. Rating 14/10.

    I love this blueberry buckle! We had the full blueberry experience - I served this with homemade blueberry ice cream and fresh Quebec wild blueberries! Delicious! Second time around I had no cornflakes, and so I replaced cornflakes with large flake oats. I prefer the crunchy cornflakes but oats also work in a pinch. Thanks for a great recipe and video !

    Good afternoon Claire, this cake looks absolutely delicious. It is a no nonsense cake as well. It is not too much work, once you have set up your ingredients, it goes fairly quick and easy. The amount of blue berries settled lovely during baking. The streusel topping adds the final touch. I will have to make this I can just imagine the flavours. Blue berries are extremely expensive where I am alas, I will make a plan. The video was nice to watch, you keep me interested and your kitchen is easy. Thank you for sharing and the tips are most informative. Have a good day, many blessings. It's my son's birthday, he always enjoys chocolate cake so that is what I baked this morning, it looks good in the pans so it will assemble fine. We all enjoy cake in the home!!

    Made this for some friends this weekend. I used dark brown suger on the top streusel bit becasue i didn't have light, and It burned a tiny bit, i just picked off the burnt bits and made another topping in the toaster oven and re-sprinkled it, it was fine.
    overall, incredibly good, very moist, big blueberry flavor, very fun to make with my partner.

    Claire, you are to me what Martha Stewart is to you! That said, I always thought it was called blueberry buckle because the butter caused little buckles down through the cake creating a rich well of melted butter. My first recipe made for buckle, you didn't cream
    the butter and sugar. You cut the butter into the sugar till there were dime size pieces of butter. I've never found that recipe since, but it was magical!! Have you ever read a recipe like this?? If so, could you please share it!? Ty!

    Claire, I hold my hand mixer the same way as you. I find gripping the hand mixer on the middle on the handle to tire my wrist way faster than if I (like you) hold it more on the back of the handle or even at the back of the body of the mixer. Holding it that way also somehow makes the hand mixer feels less heavier to use, so yeay for both of us 😀

    About the hand mixer. When I was 4 years old standing on a kitchen chair, I was making meringue with a hand mixer, it was very tiring as a young girl. For years I made the meringue for my mom. Now I prefer a stand mixer; the easy way!
    You demonstrated well how to safely hold the hand mixer, otherwise it would put too much stress on your shoulders.
    About ergonomics, I am surprised you dont work on a lower surface, isn't there a pastry counter height? As a petite woman I prefer to knead on my kitchen table, it allows a better extension for my arms and I can use my weight down on the dough, keeping my arms straight, I dont fatigue my shoulders.

    Thank you for another great recipe! I made this exactly as written, and it was perfect! Shared it, but my husband and I ate about half of it in 2 days! I am thinking of trying an apple version, augmenting the apple flavor by adding freeze dried apple (ground) to the streusel. Any thoughts as to whether or not this would work?

    Tried this recipe. Tasted great. Next time I wont use corn flakes. The corn flakes seemed to get stale in about a day while the rest of the cake was still great.
