This Ribeye STEAK Changed my life Forever | Ft. Kosmos Q

  • Back when I started cooking steaks the world was a different place! We didn’t have TH-cam or a massive community of BBQ cooks who could show me the right way to do things. What we did have was a bunch of guys hanging out in forums just throwing around their latest recipe creations, and that's exactly where I found this one! I made this steak about every way possible trying to dial it in and it was a great way for me to learn a thing or two and impress the Mrs. in the process. Check out the recipe below and try this one yourself! Guaranteed to get you out of the doghouse!
    Ingredients:
    1 - Package Fresh Rosemary
    1 - Package Fresh Thyme
    1 - Choice Bone-in Ribeye
    1 - package of Whole Mushrooms
    1 - stick Kerrygold butter
    1 - bundle of Chives (for the frills)
    1 - bottle of cheap Soy Sauce
    ¼ cup - Heavy Cream
    Kosmos Q Cow Cover Rub
    Kosmos Q Texas Beef Rub
    Recipe:
    Step 1 - Marinate your steak in a generous amount of soy sauce for about 30-45 minutes. These steaks are about 1in ¼ thick so if your steak is thinner, cut the time down a bit so it doesn’t get too salty.
    Step 2 - Push all the air out of the plastic bag and throw it in the fridge.
    Step 3 - Get the cooker going and get your coals nice and hot for an indirect cook.
    Step 4 - Pull that steak out of the marinade, season generously with Cow Cover and Texas Beef (or whatever you have/like)
    Step 5 - Start your mushrooms in the cast iron, or do these on the stove if you prefer.
    Step 6 - Put the steak opposite of the fire until it reaches 100 Degrees F. Then sear it and baste it with some herb butter while she rests! Pull your steak at 127 degrees F for perfect medium-rare doneness!
    Step 7 - Take this opportunity to add the heavy cream to start thickening up the mushroom cream sauce.
    Step 8 - Let your steak rest for at least 15 minutes and carve it up nice and pretty.

      @@seananderman4668 Killing it? By drenching it in soy. All salt, then adding 2 rubs which are salt heavy. Dude can't cook

    You can submerge the marinating bag in a tub or pot of water to very near the seal at the top, and the pressure from the water will force ALL of the air out of the bag. I use that trick when freezing individual steaks all the time.

    Small tip for getting air out of the bag. Fill the sink with water and dip the bag in. The water pushes the air out.

    That's the exact way I season my steaks. I just learned about soy sauce about 2 years ago. I used to always us Worcestershire sauce before which isn't bad either. Anyways you knocked it out of the park as usual. Looks fantastic

    Pro tip for the air in the bag.. Close the zip lock almost fully close then squeeze most of the air out... Now take a straw and put it in the bag then szip it up with the straw sticking out.. Suck out the remaining air then pull the straw out and zip it up quick... Now it's vacume sealed lol

    kosmo, love all your vids. maybe its everybody's preference, but how do you even taste that steak with 4 0z of each seasoning coating it...it seems like it would be overkill.....i guess i prefer more of the meat flavor instead of meat flavored seasoning...anyway, keep up the great job on the show, always entertaining and delishhh looking!

It's good with just salt and pepper. No argument there. But nothing wrong with some extra spice or sauce. Doesn't take away from the beef flavor, just adds to it.

    Hell yeaaah!!! I use soy sauce as a base marinade for steaks almost every time I cook them. Its even great with carne asada seasonings etc, I just dont let them marinade as long.

    I marinate mine in 1 c of soy sauce, 1 tsp of worchesteshire sauce, 2 oz of bourbon, 1/3 c of dried minced onions, 1 tsp of granulated garlic. In a zip lock bag for at least 45 minutes but it's great if you do it overnight! No need to add any other spices or herbs.

    Why sometimes do you sorta slow cook/smoke it then grill. Instead off just grill? I've tried this before but seems like the stake comes out tough.. im still learning fyi!! Lol

    The best way to get air out of bags like that is to partially fill you sink and submerge the bag slowly up to the ziptop then close. That gets the air out with no struggle or mess.

    Kosmo! After seeing a lot of your videos (and I mean a lot), decided to visit your website and place an order for a batch of the spices you keep on raving about. I spent about a "C" note (don't tell my wife!). I'm eagerly waiting for my shipment.
    I'm thinking I'll cook some ribs when the spices arrive, because steak can be great with just salt and pepper. But I am looking forward to trying the "Cow Cover" on a ribeye. Ttyl.

    ive been marinating steaks in soy sauce for years. You can actually us alot less and get the same effect by just laying it on a plate. Buy the more expensive stuff, it taste better. The soy sauce helps tenderize the meat so even a smaller amount will do just fine

    Food problems for some of us say “ You must remain Soy free, and You must be lactose free” - fantastic that you do such a great job, however for me the “kiss” therapy is applicable Keep It Steak Simple, thanks for video. The name Komsomol sounds Greek, it has been my observation, lots of Greeks are great cooks.

    If you want to buy cheap soy sauce, just be sure it isn't the "fake" shit... which is essentially salty artificially colored water. Even the real deal soy sauce is pretty cheap. Also, if you want to get most the air out of a ziplock bag... get a large bowl of water, drip the bag into it almost to the opening and close it shut. You can also just stick a straw at one of the the ziploc and close the top all the way to the straw, then make sure the straw has a nice seal around it as you suck out the air... keep in mind you don't want to suck out the air too quickly, or you'll get a mouth full of soy sauce. When you've sucked out most the air, and just prior to the soy sauce entering the straw, quickly seal the bag as you close the remaining portion of the bag... Note: only about a half inch to an inch of straw should be in the bag, below the seal.

    I use soy sauce or teriyaki sauce on a lot of my beefs but I'd recommend not injecting it. It'll turn the center of the beef black...lol. Tastes heavenly though...lol 👍🥩🍻

    Hey, I'm 4 min in watching you struggle getting the air out of the bag. Go get yourself a cheap vacuum sealer and do this, so much easier. Oh and by the way, sealed you're also now set up to sous vide. I haven't done ribeye sous vide yet, but what I have done just rocks. I dare you to try pork tenderloin sous vide at 140F then quickly sear for color. Looks med rare, but totally safe (if you sous vide it properly), delicious and juicy as hell. You'll forget the dry overcooked (just really over temped) ones you learned to hate. The other white meat? Chicken breast rocks this way also.

    As a former chef and now master butcher...i prefer my steaks to taste like a steak
    Even tough i like your video s i d rather not spoil a prime cut of meat like a ribeye with shit loads of seasoning. The marbling and fat.content of the ribeye will give you your flavor profile...but thats my opinion and and preference

      I didn't do the mushrooms, sorry not a fan, but the rub combos are amazing! I cooked a "junk" steak and it might be the best steak I've ever had! Thanks Darien, great job!
