Apocalyptica have been the kings of metal cello for the last 24 years. They do it with and without drums and singing and there is 4 of them on cello in their early material(just 3 now). They do their own music but their first album was just Metallica covers. 'Apocalyptica ft. Corey Taylor - I'm Not Jesus' is from one of their recent albums where they added in the drummer and had famous guest singers on it.
If you haven't done Lindsey Sterling yet you should give her a try. Only cover she does I can think of is Radioactive with the Accapela group Pentatonix.
Lindsey Stirling has done quite a lot of covers in her career. In fact some of her starting stuff was covers of gaming music. Later on she's done a lot more on top of the stuff she writes herself. So there are plenty of covers to choose from performed by her.
From what I've read you can thank Sir Elton for kind of discovering this guys, he saw them quite a few years ago and had them open some shows in Europe and quickly realized that they should be doing their own shows.
Definitely check out more 2Cellos. Amazing juxtaposition of classical instrument and rock music is amazing. I was lucky enough to see these guys in concert a few years ago. Too bad they has split up to do their own things. Who knows... maybe they will get back together after taking a break. We can only hope. Thunderstruck is amazing. The Show Must Go On always makes my cry, because of Freddie knowing he was going to lose his battle with Aids (Album release in Feb 1991. Freddie lost battle in November.)

there are several fantastic concerts by them on youtube,one of the best Sydney Opera House, and that tune was from that concert, was it 2016 or 17....second half mostly rock including a couple of other AC/DC tracks, there is a great one from Verona and also from Pula Arena was great.(from Pula to Pula) , there are also concerts like one from Zagreb that was mostly Classical but i think that was Stjepan, alone with an orchestra and choir but no rock on that one, they have heaps of variety and not everyone likes both sides of the spectrum they do, i love it all
I saw them live once (not with a full orchestra backing them unfortunately - that would have been amazing), but honestly if you get the chance - go see them - it's an incredible show!
Stjepan is from Croatia, Luka is from Slovenia, they met when they were very young in various cello competitions where they competed against one another but a friendship started and rest is history. Anyway, since 2cellos success it is very hard to get into a music school for cello here (in Croatia) - so many kids now wanna play the cello and it's such a wholesome thing. They inspired so many kids to pick up this beautiful instrument

The Harp Twins are very similar in that they use classical instruments to play non-classical music. They used the relic of an old textile mill (about a mile from my home) in this video of their version of "Fear of the Dark" by Iron Maiden. If you decide to check them out and either one hasn't heard (or doesn't remember) the original version, you could do a comparison between the original and cover. Be safe!
