As a life long resident of the state of New Mexico, I give you a standing ovation. I am not Hispanic or Latina in heritage, but because my family has been in NM since the days it was a territory, we do a lot of cooking of Mexican type recipes. And NM has its own variations of those recipes then from others. So I just want to say that this looks mouth watering delicious, and I bet your kitchen smells amazing.
I just throw the chilis in seeds, stems and all - remove the stems before whirring up in the blender. I make it in an InstaPot - pressure cook for 40 minutes - one step - totally done. Much easier. Delicious.

A Paula Deen tip I learned to remove the grease/oil from the top of anything you are making is, use lettuce leaves like red leaf or whatever. The oil sticks to the lettuce and you don't have to skim or put in the fridge to cool off. It really works.
Looks so yummy! I love birria with the caldo. We made it for New Years Eve. Quick tips: to get all the liquid out of the seeds when you are straining the consome just press on them gently with a spoon. And we use the little nets that we get when we buy garlics or shallots as "bags" and put the pepper corns, bayleaves (we also use coriander seeds for flavor and cloves) in those! Make things easy to fish out and no mess or no ouch! 🤗🤗
