HOW TO SMOKE BABY BACK RIBS IN THREE HOURS

  • In this video we do a 3 hour cook on some baby back pork ribs. We like to keep it simple here at Anderson BBQ Supply, so we did just that.
    To Start we pulled the membrane off of the ribs, then seasoned them with our JDQ Sweet rub and Heath Riles Peach rub. We didn't use a binder, we rarely do, so we seasoned one side, let it sweat to absorb to the meat, then we seasoned the other side.
    While we were waiting on the sweat, we started our K4L drum cooker. Jealous Devil charcoal and hickory chunks from Chigger Creek Wood Products.
    We hit our temp of 275 degrees and put the ribs on meat side down. After 2 hours we were seeing the meat pull back from the bone so we knew to pull them off and wrapped them.
    We double wrapped these ribs and before putting them back on the smoker we used Heath Riles Butter Bath and Wrap to lay inside with the ribs. This helps with tenderness, adds flavor and is much simpler than, brown sugar, honey and butter that we all sometimes do.
    After one more hour on the smoker between 250 - 300 degrees they had just the right bend to them. We opened up the foil, turned the ribs over and let the bark set up for another 10 minutes.
    Because we didn't sauce these ribs, we were all done. Nice and easy. 3-hour ribs. No binder, no spritz, no fuss.
