    My new favorite...not only BBQ/cooking channel, but favorite youtube channel right now. Soooo much GREAT infomation! Being a fellow midwesterner/ Illinois is a plus too! So happy I ran into your channel looking for maxwell st polish videos! Thinking about opening a BBQ spot in the midwest IL area, gotten alot of great information just on that alone.     Excellent as always Joe , I’m firmly in the Victornox camp as well… Would have loved your input on Smooth vs Scalloped slicing knives , I prefer smooth but don’t know why lol

    I use my blackstone bench scraper to get greasy sludge and gunk out of my smoker cook chamber.
    I bought a vac sealer this year, must have for me.

    I had an inkbird instant read thermometer, and I liked it better than the cheaper thermpro I had. Hinge was much improved and the magnets are stronger. Until I had a pellet grill get burn back into the pellet hopper where the inkbird was magnetized to and melted it. So I am back to using the thermpro regularly for now lol

    Another great and helpful video. I have a block scraper but prefer to use a 6" putty knife that I put an edge on one side. It`s great on a griddle also. Victorinox knives are the best $$$ for the money. Bought my first one in 1980 (still have it) and never used another brand when I was a meat cutter. Still have over 20 Forschner/Victorinox knives of all sizes. A vacuum sealer, even if it`s a cheap one is probably one of my favorite tools in the kitchen. Leftover brisket and pulled pork warmed back up in 160 degree water for an hour is just like it was the day it came off my offset. Thanks Joe.

    Happy 2024! This was a wonderful bbq essentials list! The only thing I felt you missed and I would like to know which one you recommend is a vacuum sealer. I see most people use a wood cutting board, but I always worry, so perhaps needlessly, about the hygiene issues. Apparently, in competition bbq plastic ones are required. Clearly, the plastic ones do not look as nice! Thoughts on this?
    Oh wait! You did forget another thing! A subscription to a Korean newspaper! As you have taught us, a fire is just not a fire without starting it with a Korean newspaper!😂

      I don’t use a vacuum sealer very often so I don’t have a great recommendation for that at the moment. As long as you wash your wooden cutting board with hot soapy water, and keep up with the oil and cream, your board will be safe to use.
      That subscription is top secret. Unfortunately you guys will never know.

    8:23 Hi Joe, is that an AccuSharp branded sharpener or something else? I tried pausing the video but couldn't quite read the finger guard, thank you sir!

      yup. that's the one. again, it's not the best piece of equipment. i only use it when i'm in a pinch. i would definitely recommend getting it properly sharpened when you have time.

      @@knoxavebbq Awesome, thank you! I actually purchased the same Victorinox knife on Amazon in July 2022 and it's been ok but I want it just a tad sharper. I look goofy using a steel rod and I'm too lazy to use a stone so I've been using a cheap 2-stage sharpener but have seen the AccuSharp in stores. Thanks again!

      @@redbirdsjunkie you should still be using the honing rod after using the sharpener to get rid of any burrs. but i've been there. let me know how it goes after you try it.

      Thanks for watching! I’m not a fan of wireless thermometers. The probe are too big. I don’t like seeing the big hole in my food. Haha. But I’m sure in the next few years they’ll make them smaller.

    The sausage stuffer!! I have a 5lb one and with my first big batch it was really annoying having to keep reloading! On a small batch it’s great but if you plan to do bigger batches it can be super frustrating

    Good video! Talking about Dexter knives, look into the Dexter Russell 360 knives. Love those!! They have texture and a rubber grip and I think the shape conforms more to the hand. I have also used a Mercer flex boning knife. I also like the color variations.

    I just started making sausages as I was gifted a grinder add-on for the kitchen aid. The grinding part is pretty great and easy but it also doubles as a stuffer and for that part I do not recommend it. (especially solo) Thanks for the stuffer suggestion, I gotta look into it more!
