These shops were "inspired" by Jiro, so that's why they mount the veg on top of the bowl.
I don't know how you could tell a person's age based on what they write, you must be really talented, Anyway, back to the truth of the matter, this is just a simple cooking show, there's nothing weird about it. People always have to write the same crap over and over, and in your case it didn't even fit with the video, that's why it was stupid.
