    Beth, there is nothing better than homemade ice cream. I love the custard that you get for your ice cream, so creamy and smooth. Perfect combo with mint and chocolate. It´s a winner!

    I love the idea of steeping the mint!!!! I want to make this, alas, my mint plants are not as big as usual because of the drought, but I can always find a nice bunch in the grocery.

    Hello Beth, I made your chocolate mousse cake for dinner. I had to substitute the wafers with organic Oreos because I couldn't find them anywhere (whole foods, trader joes, Ralph's, you name it). It was so delicious but would you mind letting me know what brand I should be looking for next time I make the chocolate mousse cake, please??

      Oh sure! I know those wafers can be hard to find. But next time look for these "Famous Wafers" they are called and weirdly they are stored on end caps in the ice cream section, like where they sell the ice cream cones and sprinkles :) Here's an amazon link, I have no idea why they are so expensive on Amazon, they are only a few dollars at the store :) amzn.to/2bIC5m7

    I have a compressor cooled ice cream maker. I've made mint chip ice cream before and with chips it is very creamy. When I drizzle the melted chocolate stracciatella style I taste or mouth feel VERY noticeable ice crystals. Any suggestions?

    Had a mint plant couple of times, and the aphids got to them. I would love to keep fresh mint all year round. Aphids are annoying, it’s not a bug you can just shoo away. It’s a plant tick.

    Is it possible to make your ice creams minus the machine? I have made a lemon Greek yogurt ice cream before without an ice cream machine and it was awesome. I really don't want or have the space for another kitchen gadget, but I truly want to make your own ice cream recipe.

    I dont have an ice cream maker. Can i just freeze it? Also can u recommend a brand of ice cream-maker?

      I'm not sure, but usually, the custard would freeze solid and not become ice cream. A way to deal with it could be to freeze the custard for an hour, take it out and beat furiously, and freeze and repeat around five or six times. I'm pretty sure Beth has a Cuisineart ice cream maker. Hope this helps !

      Sure you could try to just freeze the custard but it may not have the same creaminess to it. The machine churns a lot of air into it giving it the "ice Cream like" texture :) I love the Cuisinart brand of ice cream makers. I've had a few models over the years and I just bought this one this summer and love it! amzn.to/2aXgN2x

      It doesn't really matter so long as you have the cream. I often times use 2% because that's what I typically have in the fridge :)

    I am very surprised you didn't use mint extract in this recipe. Does the mint flavour really register by just steeping the mint leaves in milk?

      Oh yes it does! And it has a really delicious flavor to it too! :) The steeping time which is long is what does it!

    want to add that the recipe looks amazing.
    but one thing had my attention, and that was the settings on the icecream machine.....
    isn't gelato and icecream the same?
    Gelato means icecream in Italian.

      While they're very similar, they are still different. Gelato is churned much slower, so less air is incorporated. It is more dense than ice cream, and much silkier. :)

    Beth, could you recommend some culinary arts books to me? I don't want "cooking for dummies." I want to learn about advanced techniques, foundation ingredients (ex. plain bechamel) and how to appropriately improvise with them, what kind of flavors and seasonings are complementary, how to create a dish within a cultural context, how to combine elements from multiple cultures, and more. They don't all have to be in the same book. Thank you so much!

      Mint isn't a fruit. I'm positive that it is an herb.
