  • Wild geese were plentiful in 18th Century America and were prized both for their meat and their layer of fat. Chef Staib prepares a typical winter meal of Goose with Turnips, along with Crab Cake with Herb Remoulade. We also visit Harriton House and see how a root cellar was a key part of 18th Century kitchens.

    Thanks for putting up the Chef Staib episodes. As a Nordic i had never heard about them before i ca,e across here, and as a " Georgian- Edvardian history buff" , liked Townsend channel for years . And former commis chef and appi and nearly 3 years in restaurant experience it is things i should have gotten to know when i worked ,it would have been a very good source to use daily for inspiration.

    I like how he says, "Add some chicken stock," but then as he is saying that he follows up by pouring two ladles of what appears to be brown sauce into the pan... Is that just... implied? Should that be ignored?

      Yes because they had to use what was available. I'm sure it was delicious. He sure did a lot to put these shows together. Okay? 👋
