Wow, that is a big Marché de Noël! My husband and I moved to Pau in SW France (Pyrénées-Atlantiques) on 1 November, and we are enjoying the Marché de Noël here. It is much smaller than the one you showed in Nantes - which makes sense, since Nantes is more than four times the size of Pau. We have about 30 chalets in all, with about 15-20 in the largest Place in the historic city center, and the rest set up in two smaller Places a block or two away. Just this evening, we had dinner at a bistrot in the historic city center, adjacent to Place Clemenceau where the main Marché de Noël is set up, and the decor and lights of the Marché de Noël and adjacent pedestrian street were so beautiful!

That nougat looks a lot like my grandmother’s pecan divinity. She never made a big cake sized thing but dropped spoonfuls on waxed paper to set and we ate them like brownies. She could only make them when the humidity was just right and they were decadently sweet and light.
My wife and I were in Paris just before Christmas two years ago (2022). After dinner the first night there (not our first time in Paris), we were wandering around and happened across the huge Marché de Noël at the Tuileries Garden. We were amazed. Tons of rides and attractions, and what looked like AMAZING food everywhere. Which, unfortunately, we couldn't eat because we'd just had dinner in a restaurant and were already stuffed (which was partly why we were walking around - to walk it off a bit). We were disappointed at the stuff being sold there, though, since almost everything was junk made in China. We went to some of the Christmas markets in Berlin shortly after Christmas and some of the gifts there were better, though the food definitely wasn't. (My wife is German and we were at her sister's in the south for Christmas itself and then in Berlin to visit other family after and for New Years) Seeing your video makes me long for those European Christmas Markets... et je suis Juif! I was at the Christmas Market is Strasbourg 3 weeks ago. Amazing experience. However, I was disappointed by the number of massed produced (in China) items. We were able to buy several made in France items. Then we returned to Paris and went to Notre Dame Market (near the cathedral). Everything was handcrafted in France. It was small but very nice. I love the Christmas Markets
My best advice for any Christmas market is to go early, and then maybe go again when it gets dark to see the lights, try to avoid weekend nights. The later it gets the more crowded they are and if you don't like having to push through crowds, it can be tough. I found that the food seemed more affordable than the US fair foods, and also better tasting and more healthy in general. Melted raclette on a baguette is delicious as well as on potatoes. It's also nice to be able to walk around with your drinks, unlike in the US where you would be stuck in a beer garden or bar part of a fair. One fast food chain in Europe that I liked was EXKi, which offered fresh and healthy choices, like fruit you could eat or have made into a smoothie. They were located at train stations and airports.

Wild boar, like any wild game, won’t always taste the same. The taste of meat is affected by the animal’s diet and wild animals diets vary from region to region and season to season. One wild boar might be fantastic while another is aweful.

I’ve never been to France but I went to something similar in England when I was stationed there. They were always a lot of fun.
