వంకాయ వెల్లుల్లి కారం
Brinjal
onions
garlic 🧄
Ingredients:
- 500 grams (half kilo) brinjal
- 2 tablespoons oil
- 1 large onion
- 4-5 cloves garlic
- 1-2 teaspoons of chili powder (adjust to taste)
- Salt to taste and turmeric powder
1.Preparation:
- Cut the brinjals into medium-sized pieces.
- Peel and roughly chop the onion.
- Peel the garlic cloves.
- Using a blender and pestle, grind the onion and garlic into a smooth paste.
3.Cooking:
- Heat a kadai, over medium heat.
- Add the oil and let it heat up.
- Once the oil is hot, add the brinjal and let it cook for 15 minutes after it's cooked add the
onion-garlic paste to the kadai.
- Saute the paste until it turns golden brown and the raw smell disappears.
- Mix them well with the paste and spices, along with brinjal.
4.Final Touches:
- Once the brinjals are cooked and have absorbed the flavors, taste and adjust the seasoning if necessary.
- Serve the brinjal dish hot with rice or any Indian bread like roti or naan.
