We plan on about 130 miles a day, but it depends on the conditions, and we tend to pick calm conditions. We've seen anything from 60 to 170. We also tend to run heavy and set the sails conservatively, so this is very much not peak performance for a Snowgoose Elite.
Yes, it would be pretty easy: drill a hole, put in a John Guest fitting, plug in the tube that's already right there. The reason we didn't is because we like checking the water level as it runs, at which point having the tube sticking in there is no hardship. The natural place for the fitting would make it slightly harder to see the water flow right as you start, because it's tucked a bit back from the inspection plate.
