Its a move by performers to cover up mistakes. At the end Alessi cracked two high notes and he was subconsciously trying to prove a point at the end. Thats why he didn't cut off with everyone else like a good musician.
Some people just have superiority complexes and need everyone to think they are the best, even if they are as incredible as Alessi

I had a friend who studied w Alessi back in early 90s. He is still killing it in this performance, bravo Mr. Alessi! Hope to hear you live one day...great work from both soloists and ensemble, very cool piece..glad I found this..

99.9 percent of what comes out of the "spit" valves is actually condensed moisture from their breath, in other words, distilled water. Cleans up easily.
