U need to be more aggressive with the twinblade, whilst Eleonora ain't bad I recommend putting spinning slash on the godskin peeler twinblade it's damn near guaranteed to bleed and mixing talismans like cleanrot(the consecutive attack talisman),Alexander jar shard,lord of bloods exaultation, and bullgoats makes more consistent and stronger.
That was less a problem with one-handing, and more that any hit other than the first deals half poise damage. That invasion was actually quite late into the session and I'd been finding that anything I did 2handed came out far too late and I'd only ever chip people with the first mini-swing and they'd roll the second part.

i think dual handing the polearm would have given you more poise damage in the first encounter at 2:30
