- It's a wonderful time of the year when we can harvest herbs! I harvest and dry all the herbs that can be found in the forest and grown in the garden. Thyme and other herbs, whose names I don't even know (my grandmother taught me to look for them in the forest) - for tea. I grow herbs like basil, lemon mint, rosemary, oregano in my garden for cooking.
I have tried different ways of drying herbs. Most of all I like to dry herbs in a dark, well ventilated area. I've tried drying herbs in the oven, but they lose most of their flavor this way.
The main rules for drying herbs in a natural way:
- Do not use humidifiers in a room where herbs are dried
- Check herbs every couple of days, turn and stir
- Dry completely, if you remove under-dried herbs for storage, in a couple of months the entire package will be moldy
- I store herbs in perforated cardboard boxes or cotton bags (the herbs need to "breathe") in a dark, cool, dry place.
