Easy, fast and very delicious Eggplant with Beef.Eggplant Recipe

Peel the eggplants and cut them into long slices. Then, place the eggplant slices on a baking tray and bake them at 200 degrees for 20 minutes. Heat some olive oil in another pan.
Add finely chopped onions and garlic and fry.
Add the minced meat and continue roasting until it changes color.
Add diced tomatoes and tomato paste.
Add salt, black pepper and optionally red pepper and mix.
Cook the minced meat mixture for 5-10 minutes. Place the fried eggplant slices on a baking tray or in a large baking dish.
Spread the minced meat mixture evenly over it.
Sprinkle grated cheddar cheese on top and bake in a preheated oven at 180 degrees for about 20 minutes until the cheese melts and turns golden brown.
