tbf, the Gerudo Valley theme conveys the Canyon/Valley atmosphere, which is different from a desert. Valleys and Canyons fringing deserts often do have some nature, but have a more wild feel, while deserts are openly hostile. They made the song for Gerudo Valley's context, and just reused it for the Haunted Wasteland.
Spanish culture came from Arab culture, even the use of "ole" in sports can be traced to shouting "allah!" at the same. Something like 1 in 12 spanish words have arabic origin

I don't think it was weak, I just think BotW was trying to achieve a different affect with its music, one that accented the world and the mood as opposed to creating one. The older games certainly had more powerful and bombastic tracks, and I do have to say that BotW isn't my favourite Zelda track, but it's certainly not without merit
