Marco has always struck me as one of the best chefs- with the dexterity and yet, apparent carelessness with which he does everything, and the simplicity of the dishes. He's like, "look, it's a butter tomato-puree sauce with salmon confit, what else do you need? It's fucking delicious." And then half-asses the plating, without any extraneous weird shit like gold or needless herbs you're not going to eat

This is the exact way Ramsay filets fish. Just superbly masterful in the cut, zero waste, effortless, remains whole, and with hearing the little ticks of the knife hitting the spine all the way down. It’s NOT how they teach you to filet fish in culinary school. It’s an original technique. Most assuredly one that Ramsay learned from MPW.

You develop a tolerance to onions after prolonged exposure to them. I was a cook once and had to cook with onions daily, which inevitably meant cutting hundreds of them up each day. After a while it doesn't really affect you anymore.

I think he might be just getting irritated by the lady’s comment, that’s why he chose to ignore sometime. There are some comment and response even I consider unnecessary and unthoughtful, let alone what a busy chef with 3 Michelin stars would think.
