Hey Jon Great video. I know you don’t like how modern DJs use syncing and what not but here’s the thing, the people you showed who are using ableton are using ableton link to keep everything in sync. I think you will have a great live set. I believe that rather than viewing certsin peoples approach as wrong, instead take what works and make it your own. But you will still need your setup to stay in sync this is how live performances have been made possible. Especially when you start looking at adding lights and video. Hope this helps.
Your best bet is to go with groove boxes if you want to be playing live and don't want to do live sampling like the first example. If you want to do sample based drums, the circuit is the best value for the price. It's the center piece in the first artists set. , but the model:samples and model:cycles are good cheap groove boxes as well. After that, you could go with an all-in-one package and grab an MPCOne. Akai has kind of cornered the market on these "Music Production Centers", but there are some alternatives like the waldorf iridium or machine+. Otherwise, you start looking into other things. If you want to be able to do it in a month, I'd recommend staying away from the digitact stuff. If you're going to be playing live for the long haul, it's worth the investment in the brand. I am a novation fan personally. But there are a ton of groove boxes out there, so even stepping into the realm is a bit of an undertaking.
I'm following Reinhardt Buhr, Rachel K and Neon Vines already for a while. I love it how they play multiple instruments and the two ladies have a beautiful voice.

If you have the time check out Mezerg. IMO he is the greatest solo musician that has ever lived. He plays keys and drums - at the same time. Each of his limbs work independently. It is insane.
Maybe pick up a groove box or other multi parts instrument and start by jamming that thing until you master it and later start bring on more gear on top of it. Ditch the computer for a while, its full of distractions 😅
Rachel Collier has an online class about using Ableton for live performances. She did music for the Abelton 11 launch., Actually a good keyboard player.
You should definetly check out some live videos from gotye. he had two ableton rigs setup. one for backing tracks, clicks and video and the other for all the live instruments and midi stuff. the whole thing was setup that they didnt even have to look at a computer for the whole set. its amazing.
Also check out Elise Trouw, Haywyre and Mr. Bill. Neon Vines takes a month or so do rehearse for each video performance. Rachel K. Collier also prepares extensively for each performance and has documented her process. She also has a video course on creating live performances. She also has concert videos on TH-cam where she performs with two drummers/percussionists.
Oh man, you have to check out Beardyman!!! I don't think I've seen anyone who can do as much as he can in a live setup. Dude's a world beatboxing champ. Highly recommended!
To replace the computer you need brain piece like: Roland MC 707 or Elektron Octatrack, I think Roland will be better for you. It has 8 parts, it has synth and can sequence external gear via MIDI. Octatrack is also very capable, but hard to master.

If you're looking for a unique piece of gear for your live setup, the "Social Entropy Engine" is a very unique MIDI sequencer. 😁
there is channel called Analog Kitchen. He has everything fired up from mpc and there is a lot to learn from him even when you don’t use analog gear.
Love the Neon, like a Wizard, it takes her a month for each performance.
