Thanks for that video , But there wasn't a shoulder in in this exercise , because Shoulder-in cannot be done in the canter , it can be done in Walk and trot

It's indeed not an ''shoulder in' but it's the same idea in canter so that's probably why they call it shoulder in, keep the shoulder the horse in, bending the muscles :)
