Looks like pee gravel under the pavers. You should be using #8 angular limestone. People please stop using pee gravel. For your patios sake.
After confirming with the contractor, the stone that you see in the video does in fact meet the industry spec required for a patio installation and would be deemed as a #8 stone. We agree that you do not want to use pea gravel. Thanks for your comment.
