Thank you for the video! Do you know how I can restrict my App Registration to only be able to write in a specific SharePoint site. I can only see write permissions for all sites in the API Permissions and I don't wat the App Reg to be able to write in all SharePoint Online sites.

You need to look at SharePoint Online Resource Specific Consent capability.
