    Thank you Bev for doing these videos, I have watched and learnt from you for years now. I know that you have done these videos before and would like to make a comment on this......... Please, please, please..... keep doing these each year..... why....... because 1. it gets you into a routine each year. It reminds us it is that time again. 2. I see something new in each video that I missed in the past one. 3. I just love watching you prepare for your winter each year, makes me feel like I am part of your family. Love you to bits Bev , you truly a great human being.

    I never blanch mine and they really are delicious... they are one of my favorite home canned goods on my shelf. So versatile...My favorite way to use them is with my home canned roast and home canned carrots...I saute onions in small amount of butter then add carrots, drained potatoes and beef roast...heat everything through and taa daa Yankee pot roast in less than 20 minutes. I also love them with dumplings...yes potatoes and dumplings...my mother in law from Kentucky taught me that one. They remind her of her childhood...awe she is 86...so fun to do that... Sometimes I peel them and sometimes I don't...depends on how tough the skins are...great video Bev.

    So glad that you are still showing us canning videos. I'm tired. Just finished making 400 + cookies (over the last 2 weeks). These are going to be served at my county"s Bee Symposium tomorrow. I put them in the freezer so they stayed fresh. Because I had to have room in the freezer, I used my leftover frozen vegetables & turkey bones & parts to make 14 jars of pressured broth. Now that that the cookies are finished I will start canning again. Our Farmers Markets are quite high priced.

    I have learned so much from you and I think you are very inspiring. I too have Fibro. I have it controlled with a GF, DF and sugar free diet. I will still have some days that aren’t great for sure so I really felt for you with your sore hands today. I LOVE your canning videos!!

    Oh my.....I miss my garden. I love home canned potatoes. And don't forget, warm em up, & mash em. REAL Mashed potatoes in under 5 minutes. I've got 1 pint jar left from last year, it's like gold

    Good video. I love watching canning videos and your crafting video and your new style of life with Volfies.although I am sorry the jar broke but it was a good lesson. I know some people scoop ice out of the ice maker with glass. Also not a good idea. Thank you for making the video's. I don't watch news or cable any longer and find these "real life" NOT reality TV much better.

      +Julie from Georgia - Me too Julie. We live in Australia and it is our last month of winter. . .what a let down not many cold, cold nights at all. I would rather watch one video from Bev (although I would watch twenty a day if she put them out lol) a day than watch tv or netflix. If there are no vids to watch I work in my craft room creating art or making junk journals etc. Love Bev and Volfie xx Michelle

    My mom knits dish rags n I told her about the scrubby yarn. Now she's gonna make me one. I'm so excited cause I love her dish rags so I know I'm gonna love a scrubby.

    Only time I like commercially sliced canned potatoes and canned sliced mushrooms is when we camped. To make pan fries, and I would bring a cooking onion and my cast iron fry pan to cook on top of a fire pit grate or coleman stove. Oh and a small bottle of oil and maybe some butter, depending on if we were taking a cooler with ice. Now a days I think roughing it camping is a little too much for us. We need a wheel it up and plug it in holiday house on wheels. LOL BOY You been busy.

    Thank you Bev. I went to a farm stand and found some small new potatoes. I will be canning them tomorrow. I can't wait to try them. I agree the store ones are nasty. I just did some dill pickles today and also picked up (in the freezer) some chinese red noodle beans. I used the boiling water from the pickles to blanch my beans. lol Double duty. Then we use the boiling water to pour on ant piles in the yard. So that water was triple duty.

    Bev, "greening" and edibility has nothing to do with what type of potato it is. Potatoes grow underground, they don't like light , so when they get "sun kissed" they tend to turn green. The green part is NOT edible, but you can CUT it away and then cook them and eat them. Potatoes do not go from green to white as many people think, green does not mean young - it's simply a sign of over-exposure. Been a farmer/farmers wife for 30 yrs this Oct. trust me.

      Green potatoes are caused by being exposed to sunlight! They are not to be eaten.

      I agree with you gingergargoyle. You can cut the green off and eat the potato and yes it is from being exposed to the sunlight. I'm 62 yrs old and have been told I could eat them if you cut the green off since I was a little girl helping my mum and nan do the potatoes for the family baked lunch.

      +Deb Allen - Totally agree Deb. If I had to throw out every green potato in a bag of spuds then I would be broke lol. As a pensioner I cannot afford to waste money and there is no need to throw them out as we both know lol. Michelle

      gingergargoyle I can’t read the comments bu this is what we were taught as kids too. Also a farmers wife of 25 years but not spud farmers! Although my husband grew up growing acres of spuds we’ve only grown a few acres ourselves. We make milk ;)

    You have inspired me to can some potatoes for use this winter. I feed sometimes ten people on weekends. I want new potatoes tho. I cooked some store bought potatoes last weekend and my grown daughter said "Mom these potatoes taste like dirt" bought at the grocery store the day before but were year old potatoes.

    I love canned potatoes for quick meals, I love adding them to smoke sausage and peppers or to make potatoes salad with in a hurry,for like small bowl potatoes salad, I'm with you store can potatoes are aweful and home can are great

    Hi Bev! Can I suggest that you use one of those exfoliating gloves on your bad hand especially... like you I have it in the same joint hurts like a bugger!

    Hey Bev! There is an easier and faster way to clean your potatoes. Just put a new toiletbrush on your electric drill and give it a wirl in a bucket with water and the potatoes . It cleans the potatoes in seconds!

    Mrs. Volfie get you a nail brush from the store, it simplr fits over your four fingers and can was those veggies with a light brushing and save those thumbs. Arthritis is getting to me as well. Hurts I know. thnx for sharing. This nail brush is curve at both ends to just slip over your finger uo to the second knuckle.

    Save your home canned potato water!!! Use in soup where a potato flavor tastes good or use instead of water in any regular bread/roll recipe, (you now have potato bread/rolls), adjusting salt in recipes. If any starch is in bottom of jar, you can use in bread/rolls and leave out for soup. Would it be helpful to wear a wrist/thumb brace on your hurting hand while canning?

    I am SO GLAD I found your TH-cam Channel!! You have been a great motivator for my husband and I to start canning again. We do have a question for you...Have you ever had a lid "buckle" on you when using your pressure canner? We had this happen with a jar of potatoes and with a few jars of cabbage. We make sure the produce, jars, lids and rims are very hot when we put the produce in the jar. We also make sure to de-bubble very well. The water in the pressure canner is very hot to boiling when the jars go in. What could we be doing wrong? Or did we just have a wonky lid.

    Another thing, I do not think the potatoes from grocery stores have not been cured correctly. They are wet in the plastic bags. They do not last very long in storage and start sprouting out of season. I have tried putting the potatoes in a single layer and cover them to air dry. This helped some, but still would not last in long term storage. I include sweet potatoes in this. Store bought swt pot also do not last. Got a huge box of swt pot at farmers market. Those babies lasted through two winters!

      I dehydrate my collards...works great...they are yummy Bev...similar to other greens..i e... turnip, mustard

    The potatoes look good. It has to be so much easier to can them and already have them at your disposal for whatever you want to do with them. I have a great combo green beans and potatoes so good. How long did it take you to can 57 quart's?

    Always interesting. Especially from an expert with loads of experience! I am on my own......but I canned, made jam n pickles n tomatoes in my 20's without any fancy equipment n the food lasted.     I was thinking I might give this a go as I like the idea of having them ready to go, but still not sold on those though little skins throughout my spuds. 🤔 I'm going to ask for new potatoes at the market thanks for that too. 😉

    Bev, I saw a container of Quaker Oats on your counter and wanted to let you know what I found out the other day. There was an article that gave a list of some foods that have an ingredient that is the same as in Round Up. Quaker Oats was one of the foods listed. I can't remember where the article was and wish I had bookmarked it, so I don't know the ingredient. Just thought I'd let you know! It was the Non-GMO kind - I threw a whole big box of it out.

    Im so close to actually trying my luck at pressure canning. Its either gonna be potatoes, or possibly chicken.. these are the two i have chosen and now i just have to decide which one i am willing to take risk on in case i mess up. Looking at the least expensive possible fail to start with. And so far chicken or potatoes is the least expensive two items i can come up with in my area with the price of food going up. And of course i came looking for all your potato videos.

    I have been canning potatoes for 30 years and have never par boiled my. I also can them whole with skins on. i only cut them if they don't fit in jar.

    My canned potatoes had so much starch go into the water that it turned like jello. Yuck, but once I rinse them a couple times and blend them up they make okay slightly slimy mashed potatoes.

    Bev ..I noticed you put boiling water in the jar after the potatoes ....did you use boiling water in the beans too?

      Julie Britt , if the water in your canner is hot, use hot water, if it’s cold use cold.

    Well I put 5 pints of potatoes,2 pints of carrots one pint of white beans in Pressure canner so I am quessing 1 hour cook time hope I am write ????

      @@OurHalfAcreHomestead but are they different when dehydrating or canning?. I do not l8ke russet for potato salad. They mush up and can be mealy???

    Love the canning videos,and store bought canned potatoes are terrible don,t even taste like a potato no matter how you season them ych !!! Those are going to be so good with your green beans and pork or bacon this winter, I also put corn in with my green beans yummy!!

    Bev, I'm probably awful for suggesting this but have you ever thought of putting all of your potatoes into the last agitation and rinse cycle of your washing machine? It won't produce more dirt than say, some muddy pants from working outside and I think your potatoes would be quite clean after the cycle. I know this sounds ludicrous but being from Hawaii, I can tell you that a lot of fishermen have an old washer outside for octopus. They scrub it freshly caught with salt to release a bunch of slime and then put them through the washer to rinse and tenderize it. How brave are you to try a batch of dirty potatoes? Anyone know? It could save your hands. PS Golly, I just watched the end of the video. 57 quarts of potatoes? WOW! I've never owned 57 quarts of ANYTHING IN MY LIFE!!!

      fattymoko if I had my old Center agitator washing machine I probably would! But my new high-efficiency washer won't let me pick a cycles and use it you have to run it through the entire wash rinse and Tumble cycle so no I can't do that

      fattymoko, I’ve been washing my potatoes in my Maytag washing machine for 25 years. My aunt and cousins wash them in their washing machine too, it works great! The agitating cleans them and knocks the new peals off, so I don’t have to peal them. I just bought a new Speed Queen so I hope it works as well as my old Maytag at knocking off the peals. Use the full cycle and spin them dry. After you take the potatoes out, immediately scoop out the “bathtub ring” so the peals don’t dry on the barrel. Works great!
