Hey there frank a young Australian here I’ve just stumbled across your channel looking for some tips on pit barrel smoking I’ve decided to build my first ugly drum smoker (emphasis on the ugly) today all the way from the burn out very early this morning to the seasoning this afternoon I decided to do this as cheap as possible so I picked up a free drum off the internet got some bolts and had some high temp spray paint I had laying around (black of course) and got to work I cut the lid off leaving the rim intact and enough of the top to fit into the drum to act as a lid I put in some bolts to hold up a grill rack and drilled about 10 vent holes in the side bottom of the drum and bolted on a metal flap to adjust airflow and cut some wire mesh I had laying around to act as the grill plate it holds 16 kg or 35lbs so far the project has cost me about 8 dollars and I’m happy with the final product let’s just hope it works well enough I don’t have a laser thermometer but no probe yet I’m looking to smoke some extra fatty chickens over the weekend hopefully a nice brisket soon any tips for me or any ideas the I could to to make things go as smooth as possible . Cheers
How often do you regularly cleaningy our UDS? After each cook or after X amount of cooks? I noticed you said you had a few cooks on it this time before cleaning. Keep up the good videos!
Hey buddy, I usually clean the ash and heavy food deposits every cook but I don't do a deep clean like this everytime. I do this usually every couple months or every 10 cooks or so. I have a lot of different smokers so this one don't get 100% of the use.
how about if mine was so gunky and rusty that i want to have it resandblasted? just season it real well again? what is the purpose of that heat shield?

Great video frank 👍
Good info here. I haven’t used this cleaning method, but I will.
Thanks buddy! It is the best way we have found to use.
