On top of the technical skill regarding all of these videos for BA I just love how NONE of the food is wasted which is indicative of the economy of not just French cooks but home cooks as well in the early to mid 20th century. Even the skin was used for something, tea.

my mom peels the same way, i peel the same way, there's nothing admirable about this, it is just normal peeling.
Legit, this comment section is full of people who apparently have had people do everything for them their entire lives. This is something I learned to do when I was a damn child and they act like its some miracle of culinary excellence.
It’s not supposed to be impressive or admirable. It’s just about a great chef demonstrating the techniques he uses every day in his work. What you take away from that is up to you
maybe that's what you take away from the video, but looking at the comments what I take away is that people here are easily impressed or never cooked
frankly I'm impressed with the speed. I've peel fruit with what is quite possibly the same technique but sadly it never ends up looking that well.
Well look at it this way, I'd rather watch Jacques do this than you do it. I'm sure you're very competent in the kitchen, but the fact that we're watching a master about his craft (which probably extends further than apples) is why it's so nice to watch.
