I think that was just a bit too much weight for the horse, luckily the distance to the market wasn't excessive. Maybe a cart attached to the saddle so that the horse can pull it with big loads. The cart you used for the Pig would be good just need to make longer handles - that cart would be easy for you to load produce onto because it is lower to the ground 👍
