    I miss Emeril's show and I also miss Julia. I think her cooking show was the first one I had ever watched, and it started my lifelong interest in cooking and cooking shows. My all time favorite is Yan can cook on the public television station.

      @@stndrds79 if it wasn't for the success and popularity of Julia Child, there probably would not have been offers to other chefs to appear on TV.

    I remember watching this live and it was pretty embarrassing for Emeril. He was unprepared for Child's visit. Earlier, he forgot to put the cheese in the cheese soufflé. He didn't even bother to read Julia's recipe in advance to know that she puts thyme in her hamburgers. He instead offers her his "essence" and she says "I don't like that!". If Julia Child comes on your show, you have what she wants waiting on a silver platter. Emeril was about entertaining his live audience, many of which were not that interested in cooking. Child was about educating people who really liked to cook and wanted to learn more.

      Yes emeril was never about food or cooking. It was all about himself as the star and people got Tired of it. I'm so glad food tv executives figured that out and basically made him irrelevant on the network. He was a turn off very off putting. He still tries to shamelessly sell his ceappy cookware on hsn

      @@stndrds79 they cancelled him because he owned to the rights to anything he did aside from the cooking show while all the others like rachel and the rest had to give up a % for everything the did ... also he made 1m for a 3 year spot while Rachel and others made 175k a year MAX ... they canned his show for profit ... not for quality

      This episode was an embarrassment the soufflé never rose it didn’t come out right and actuslly under cooked they didn’t know why this episode was a fail lol

      Working with Julia was always difficult no matter how prepared you were, that was her charm. She was always right and would change things on a show if you were completely prepared with her recipe, because she wanted people to love cooking.
      Emeril is a fantastic classic chef but not really a home cook first. Whereas Julia just always loved cooking and got famous because of it, he got famous as a chef first then started a show to boost his reputation and get people cooking for the first time. Yes I know Julia also was one of if not the first classically trained female French chefs in America as well.

      +Juan Lopez -- Julia didn't really have much to do with the Food Network. She, Graham Kerr, Jacques Pepin, et al were Public Broadcasting System stars.

    I like how Emeril had to mention Jacques in this bit. He knows Jacques would own him. Hence the reason the famous show is Jacques and Julia, not Emeril and Julia.

    Thyme? Shallots? I don't know if that would be my kind of burger. I wholly agree on the 15-20% fat content and keeping it thin to a certain degree. And definitely use a grill unless you don't have that option.

      Please give a fresh handful of Thyme leaves a try in a burger. i promise you it is an very nice and subtle flavor you get. Just did it tonight as I always do. Also the shallots are just a sweeter onion which would be very nice as well. You wont know until you try! I don't think you'll be dissapointed.

      I would MUCH rather have sweeter onion (shallots) IN my burger rather than loose large pieces falling off of the thing overpowering the beef flavor. I don't want to take a bite of onion, but I also don't want deadspots, if that makes any sense.

      She was very gracious to everyone and would never be critical of someone like Emeril in public. Apparently off the record she said something like "Emeril is popular with people who are not serious cooks".

      In her prime, she was 6'3. Until she had kitchen counters custom built to suit her height, she had to bend over all the time. I'm a chef, and even at 5'8 I'm always hunched over. I can't imagine how painful it would be at her height!
