Adobo and Humba are almost the same but for Adobo, there's chicken adobo and pork adobo. For Humba it's only for pork, it's kinda like adobo but more softer. The pork fat looks like a jiggling jelly. And most of all, it is called HumBa because it stands for 'Humok nga Baboy' or 'Soft Pork'. Only Bisaya knows about it. Just saw this video and I'm happy to see you enjoyed the fiesta, Sonny.

When I was in Philippines and had some lechon, nobody would let a kid go anywhere near the lechon during the cooking process, everyone would yell at any kid that would get close lol. I am very surprised that that kid got to help cook. Another great episode, love the cultural experience in this one.

Someone explained that he doesn't need a sharper knife. A better weighted one maybe. But its because of the fat under the skin and the slime from the eel. The sharper the knife with it being so fatty and slimy it can actually cause terrible cuts and possible amputations. So definitely doesn't need to be sharper just maybe weighted better.
All fish has slimy coating over their whole body and eel has like x10 that coating. That is why its so hard to cut. In other parts of asia, they skin this fish from one end while on the other end it has a nail attatched to the chopping board to prevent it from moving. Thats how slimy it is.

Humba and adobo are different dishes for us here in Cebu and most Bisaya speaking regions. Humba is a sweat and savory stew flavored by soy sauce, central (very dark unprocessed coconut sugar), vinegar, bay leaves, garlic, onions and lastly fermented black beans. Adobo to us is pork belly that starts being boiled in water, soy sauce, garlic, bay leaves and black pepper corns then the sauce is allowed to boil off and evaporate making the meat super tender then oil is added to fry and allow the meat to carmelize with the saucy coating.
Don't know about things at cebu but where I am from (Bicol), Humba is separate dish from Adobo. It is cooked similar but with a completely different flavor profile.
