I don`t know if this is an invitation to talk about pie, but I am going to pretend it is. Firstly when baking with berries it is easier to get a firm filling if you work with frozen berries that you thaw and then press them gently to remove liquid. That leads to less moisture in the berries and therefore a firmer pie. Another thing you could do is add some form of nuts that would soak up some of the liquid, but that I haven`t experimented with enough to solidly say is good advice. I also would reccomend checking out a cosy kitchens blogpost about pie.
One trick for the pie crust that has saved mine, add vodka into the pie dough. The alcohol will all cook off but I found that it adds that extra starch to make the dough a bit more flexible. When I make pies now though, I just use Trader Joe’s pie crusts because I’m lazy and they are awesome 😂
You could try cooking the blueberries down first almost like jam, but with still some integrity to remove some of their liquid? That's something I would try next if it were me. :) Looks lovely though *O*

I ended up wearing a grey skater dress with a poofy black lace underlay and a white button up shirt, some DIY ears which I loved making and a leaf I carried. First time actually cosplaying and I was surprised how well it turned out. :)

Also for baking the bottom of the pie through, i would suggest blind baking it before adding the filling (idk how much you know about it, but it's basically when you put some parchment paper onto the pie crust and then weigh it down with beans or whatever you have handy and pre-bake it for a bit. you can find instructions about this online as well) blind baking ensures that your bottom browns a little already and doesn't soak up all the moisture, so you will then have an even crust :)

Also, maybe blind bake your crust so it's cooked half way and then bake with your filling? You can use raw rice or uncooked beans if you don't have pie weights.

I feel that Bon Appetit obsession so much! I keep trying to pick a fav person from the test kitchen but I truly can't. Every time I try a BA recipe, it tastes amazing (even when I mess it up). I made Claire's Angel Food Cake recipe and it was magical. It didn't brown on the outside (no idea how I screwed that up), but it was light, fluffy, and delightful. Your blueberry ginger pie looked so good! The top looked so crispy and wonderfully browned! Anyway, I love your vlogs and hope to see more baking

The King Arthur Flour baking book was my baking 101 text book in Culinary School! They are a wind source of baking inspiration and tips! Also, you can add a smidge more cornstarch to your pie filling to help it congeal! After a very, very heartbreaking moment, my friend whisked me away to her apartment and sat me down in front of a TV and started playing it. I've been hooked ever since. A chill, kitty, drawing and baking video was just what I needed after today. (Also, I *totally* understand the turtleneck feeling. I haven't been able to wear them for YEARS.)

i work as a baker! blueberry pie is often super watery, you can add a little bit of cornstarch to your blueberry mixture to thicken it up. that pie looks fantastic :)

you could always blind bake the bottom without the fillings or lid for a few minutes! pastry like that probably won't burn when you put in the fillings and everything else on top and bake it :)
Yup that's what I do. I put dry black beans (that I keep only for baking) on the bottom crust so it doesn't puff and lose its shape, and it doesn't get as soggy once the full pie is baked! I hope my explanation is clear? Otherwise look it up online, it's an old grandma trick. ♥

Your pie looks absolutely amazing! One reason we put vents in the pie crust is so that it doesn't explode in the oven! The steam builds up pressure inside the pie and than P O P! terrible mess all over the inside of your oven, and no pie. A pie crust tip my mother has passed down to me (for getting the perfect crust) is to put the bottoms crust layer in the oven for ~5-10 minutes and than put your filling in and the top on. Best of luck in your pie journey! :)
You should try and pre cook the bottom crust first with weights (so it doesn’t rise) on it for a few minutes 😊 that’s what we do when we bake pies in France ! I love your vlogs so much !! ❤️❤️✨

What a lovely pie! I've heard setting the pie on a pre-heated pizza stone, or pre-baking the bottom crust before putting the filling in, can help get the bottom crust cooked all the way. Never tried either, but that's the word on the street, I believe.

Love this video! So homey and personal, I just love the aesthetic. I love bon appetit family as well. I actually have a go-to recipe I make for co-workers and friends from Claire. You should try her Morning Bun recipe. It takes extra time to make, but it is so worth it In the end. Everyone at work and my friends during our weekend brunches love it. Not too sweet and not too decadent, just perfect with tea or coffee. I hope you give it a try!
From what ive seen people do, youre supposed to bake the bottom of the pie first and add some nuts or something on top of it so it wouldnt rise/get taller and then add the filling and top after
You've probably already decided what pie to make for National Pie Day but one pie that my family enjoys making is a lemon icebox pie (I think that's what it's called?) it's 1/2 cup of lemon juice, 1 block of cream cheese, an 8oz can of condensed milk, and a container of cool whip (I'm not sure how this could be made vegan-friendly but it's delightful). Super easy! It all goes into a graham cracker crust and it can be kept in the fridge but we like them better frozen bc they're much easier to cut. thank you for the video!
A really good way to get a fully cooked pie base is to blind bake it!! So you pop your pie crust (without filling) and put a layer of baking paper over the crust then fill it with some rice and cook it for a little bit, then its ready to be filled and cooked again and you'll have a nice and crispy pie crust on both sides (sorry my instructions kinda suck, but there are great instructions online!)

About the pie, I believe the others gives a good solid advice , but also try to change the pan . Go for something like glass to be able to see through and know if its cooked or not, and metal sort of a kind , as they (both type) transfer heat much faster than a ceramic dish and you will be able to cook it faster ! Hope thats help
Have you looked into baking the bottom half of the dough for a short time before putting in the filling? I don’t bake pies but I’ve seen many people do that, with little round metal weights to keep the dough from rising

I've heard setting the pie on a pre-heated pizza stone, or pre-baking the bottom crust before putting the filling in, can help get the bottom crust cooked all the way. Never tried either, but that's the word on the street, I believe.

Love this video! So homey and personal, I just love the aesthetic. I love bon appetit family as well. I actually have a go-to recipe I make for co-workers and friends from Claire. You should try her Morning Bun recipe. It takes extra time to make, but it is so worth it In the end. Everyone at work and my friends during our weekend brunches love it. Not too sweet and not too decadent, just perfect with tea or coffee. I hope you give it a try!

From what ive seen people do, youre supposed to bake the bottom of the pie first and add some nuts or something on top of it so it wouldnt rise/get taller and then add the filling and top after

Hey :) you can use pectin to help your fruit set, also blind bake the pie bottom a little to stop it getting soggy
You've probably already decided what pie to make for National Pie Day but one pie that my family enjoys making is a lemon icebox pie (I think that's what it's called?) it's 1/2 cup of lemon juice, 1 block of cream cheese, an 8oz can of condensed milk, and a container of cool whip (I'm not sure how this could be made vegan-friendly but it's delightful). Super easy! It all goes into a graham cracker crust and it can be kept in the fridge but we like them better frozen bc they're much easier to cut. thank you for the video!
A really good way to get a fully cooked pie base is to blind bake it!! So you pop your pie crust (without filling) and put a layer of baking paper over the crust then fill it with some rice and cook it for a little bit, then its ready to be filled and cooked again and you'll have a nice and crispy pie crust on both sides (sorry my instructions kinda suck, but there are great instructions online!)

Try adding tapioca flour or tapioca pearls to your filling! This usually helps my fruit filling gel up.

About the pie, I believe the others gives a good solid advice , but also try to change the pan . Go for something like glass to be able to see through and know if its cooked or not, and metal sort of a kind , as they (both type) transfer heat much faster than a ceramic dish and you will be able to cook it faster ! Hope thats help

Have you looked into baking the bottom half of the dough for a short time before putting in the filling? I don’t bake pies but I’ve seen many people do that, with little round metal weights to keep the dough from rising
