My mother used to make this all the time when I was a kid. Except, she would put crème on the cookies and stand them up on edge. Then put sprinkles on the top, throw it in the freezer and yum yum!

This icebox cake is delicious but not with oreo cookies. I found Airly chocolate crackers are better tasting & they soften nicely from the whipped cream. I prefer not to invert it and make the cake in a 9x13 so there's more to enjoy 😋
