He's very fast. I'm just about as fast as him. He cuts a scallop white side up. And uses 4 movements to shuck it and cut the meat. He's right handed. I'm left handed and can cut a scallop in 3 cuts. I cut mine pink side up.

Very good brotha. I wouldn't say fastest cutter ever period lol there is no fastest cutter there is a table of the fastest cutters but you're fast up there with the elite guys. If you can keep that speed all trip and cut big ones like then in my opinion you earn yourself a seat at the table.

Yep. He's pretty fast. I bet he's hard to beat when he gets his rhythm. I've seen a few as fast as what he's doing there. He's putting a meat in the bucket every 3-4 seconds average. That's decent. (better than me) One every 2 seconds is amazing and I've seen it done that fast.

      “No you don’t”???
      m.th-cam.com/video/qiyzO9M4nik/w-d-xo.html
No offense, that’s not the only problem. Scalloped for over 20 years and I smell bologna. Fact that some comments says guy is a captain, explains why he is getting praises while not getting any critique at all. Let me explain what’s wrong with this picture.
      1. He throws away tons of scallops. Some people in comments claim that’s broken shells. Well, that would be loooots of broken shells. That would mean, somebody definitely doesn’t know how to use cargo and crashes tons of scallops with dredge’s shoes (definitely don’t belong on winch). Anyway, not buying it. Any normal captain would give hell to a wincher for crushing so much scallops. Captain who knows he will be filmed would not choose basket with all crushed shells or at the very least say something about it (as it obviously slows down significantly). ALSO, if those would be crashed shells, from time to time you would see him sticking knife into scallops, knife stuck, than throwing shell away, OR “surgically” dissecting it from the broken bottom (as sometimes only top shell is crushed, while bottom one is fine). Don’t see any of it at all. At the same time note, as he gets deeper into box, instead of cutting to the bottom of it, so he can clean and throw all the garbage and guts out, he continues to push fresh scallops on top with his hand. That is TRADEMARK characteristic of someone who cuts big ones from the top, than throws all small ones from the bottom away. Usually with both hands. As he knows he being filmed he doesn’t do it, just continuing piling big ones on top. If you not intending on cutting small ones, why waste time picking them?
      2. Looots of ALL kind of mistakes. He makes strange moves before sticking knife into shell almost on every second-third scallops. He also struggling constantly with removing guts with one move. If you look carefully, he throws away many bottom shells with meat still attached to it, I mean without landing it in a bucket (!!!). Some people claim in comments, he cuts very clean and with same speed for ten days. That’s again,… great story, problem is, it won’t fly with any experienced scalloper. I can bet my ass, he is neither clean (even for sure he might get good count since he throws away all small ones), NEITHER he lasts longer than 3-4 days (at least cutting this way). I always called guys like this “two days heroes”. THATS NOT HOW ultra fast cutters looks like (and I’ve seen quite of few of them in my career). Ultra fast cutters ALWAYS are combination of steady cutter and fast moves. No wasted moves, very few mistakes, same speed and tempo on every shell. Strange moves (as seemingly unable to stick knife into right place with the first try) ARE CHARACTERISTIC to cutters who cut like idiots (and usually squeeze knife hard, one goes along with the other) for first few days, and in process already managed to knocked their hands out. They have all kind of little pains in their hands, and THIS is what causes all those strange moves. As their subconscious mind tries to prevent pain, hands try to accomplish some task (as say placing knife into shell) in such a way so it doesn’t hurt. As it is not possible, because muscles (and joints) responsible for those move are already sore, they making those strange repetitious moves, as if, all the sudden, they either lost vision or feel and are no longer able to aim knife into the right place. Depending where pain is, sometimes it might take them three times to scoop and throw successfully guts of the shell, sometimes they will look as they have to muscle themselves with shell seemingly unable to open it. That’s is all TRADEMARK sign of pain in hands. So does fast cutters hands doesn’t hurt? Well, all of you want to be fast cutter, listen sharply now. Yes they do. THE DIFFERENCE is, they hurt LESS than anybody’s else. This is DEFINITELY NOT a style of ultra fast cutter. It rather looks like a guy, who tries to cut fast as idiot because he knows he is being filmed, someone possibly timing him, and cheat in a process a bit. It looks as he DOES NOT CARE how fast his bucket will fill, but how many moves he makes per second, throwing at number of occasions entire, half opened, and almost finished (with bit of guts left) scallops. He DOES NOT have ANY TRADEMARKS which would be characteristic to ultra fast cutter. Might be OK, might be good (hard to tell). Definitely NOT super good.
The fastest cutter I have ever seen was guy from Kathy Marie (around 2008 or so, don’t remember his name, made just one trip with him). Other ultra was Gary from Alaska (he was top cutter on Alaska, on the East Coast (most likely because scallops is different) even he was good he was nothing close to Alaskan performance). On Alaska he was a legend. Another one was Edwino Dutru, my very good friend, short, old and ultra honest Portuguese guy from New Bedford. While weakest cutters would cut 3.25 cheated buckets and good ones 4 level buckets (it was small count, old days), he cut 5, while every of HIS bucket had extra top (he actually stick empty large shells around edges of every bucket so he can fit extra top and continue cutting till meats would not fit anymore and start falling one after another - it was at least good extra 4-5lb). While many guys cheated one way or another, Eddy would consider any form of cheating as stain on his honor. He was also great friend.
Also while on subject. Some comments talk about “rebel” style. That’s how I was cutting my whole life. It was called “free hand style” in my days, while “apron” method “the belly style”. While this style might or might not give advantage on count 20+, it also has significant drawbacks. You will never be good on very large shells (U10-15). To grab big shell with one hand without pressing it against belly (and you have to have relatively firm hold, otherwise knife will knock entire shell of your hand), you have to open hand very wide and grip it with just the tips of you fingers, than squeeze it hard. Anything less, knife, even sharp and good, which cuts through lots of guts, will have tendency to kicking shell of your hand. Squeezing hard - as easy to guess, is THE problem. You will have strong pains fast, and start lagging behind other guys. Another possible problem is (not sure was it, it, or perhaps the way I threw guts which my knife missed), my whole life, while other guys looked relatively clean, I (as well place where I cut) was always in all sort of dirt and guts from the top to the bottom. If you have your forearms constantly wet with scallops sauce from shell, as your arm rubs against pants during cutting, you eventually will get scratch wounds on insides of your forearms, which dipped in salt water and scallops sauce will hurt. Standing pain is no BFD or any concern at all. Problem is ANY (even small) extra pain, translates to lower performance. I used to cut socks ends and wear them on forearms, which helped a bit. Nothing however beats clean, dry without any wounds or scratches forearm, which I’ve seen on many other guys. If you can do both styles, that’s awesome. Don’t make mistake however of learning to cut “rebel” style, as you won’t be able to cut “belly style” with same speed, without starting to learn cut all over again. Should you go on a trip with all large stuff and a lots of it, you will suffer a lot, and lower your rank to average - below average. Would I start scalloping career again, I would never choose free hand over belly style again. While free hand again MIGHT be good on small stuff, belly style IS FOR SURE good on ALL stuff (all three ultras I know were “belly”, along number of other very fast guys).

When a guy online calls the small stuff "swill," I know he's a real one, lol. Dude has quick hands, no doubt. I've seen guys with better economy of motion though. They always grab the scallop perfect with their left hand, never miss putting the knife in or pulling the gut and they actually look like they're doing even less. More and more guys adopting that "Rebel" style too when they don't even need an apron, cutting out in front of them instead of bringing it right in to their belly. Glad he posted this though, I enjoy any videos from guys working scallopers. Brings back memories of my old man.
If you're still fishing, stay safe.
