As a Singaporean, it makes me proud that mike would go the extra mile and explore the hawker centres tourists would not know about and share it with the viewers, as I believe the best way to experience the culture is to visit a hawker centre in the heartland (IE: Not Newton Food Centre). That is how you can observe the average Singaporean way of life.
Plus there are hidden gems in these places. P.S: I have hawker recommendations for tourists visiting, but it can be alot and some of the food is an "acquired" taste 😅
But in no particular order these are some places I would recommend:
    - Tiong Bahru Market (Heng Heng Fried Sotong Prawn Mee, Lor Mee 178, Tow Kwar Pop, Teck Seng Soya Bean Milk --> you have to go to this stall really early cuz the drinks are sold out by/before 12, Tiong Bahru Char Kway Teow, Tiong Bahru pao and Tiong Bahru Fishcake)
    - Maxwell Food Centre (Chee Cheong Fun Club, Jin Hua Fish Soup, Maxwell Fuzhou Oyster Cake, Xing Xing Ondeh-Ondeh Tapioca Cake, China Street Fritters --> have to call this stall beforehand to check if they are open and preorder at the same time. You should be able to google their menu to decide what you want to order and FU SHUN SHAO LA MIAN JIA)
    - Ghim Moh Food Centre (Chuan Kee Boneless Braised Duck, Guan Kee Fried Kway Teow, Jiu Jiang Shao La, Ghim Moh Carrot Cake, economical bee hoon (same row as Chuan Kee Boneless Braised Duck, Lao Chao Zhou satay bee hoon, Hin Fried Hor Fun, 63 laksa, Tom’s City Zoom Mee Pok Tar, Ghim Moh Chwee Kueh 李老三 and Whampoa soya bean)
    - Yuhua Village Food Centre (Xing Yun Hainanese Boneless Chicken Rice, Lai Heng Handmade Teochew Kueh and Lu Fang Zhou Pin stall)

Ghim Moh food centre’s hor fun, duck rice, and carrot cake (the one with the uncle/auntie couple cooking) are the best!!! Chwee kueh is definitely an acquired taste, and the lady manning the Whampoa soy bean stall is the worst (so I go to KK beans instead 😂)

Should have ordered the mutton version too at the stewed beef stall. Should definitely try the 真善美 claypot laksa at the other side of the hawker centre. One of the best laksa in Singapore. Also very famous is the corner roast duck stall along the same stretch as the stewed beef.

I started eating at Himawari years more than 10 years ago, the price is really reasonable for a good buffet. despite it being in a pretty remote location, it survived till today. a great testament to the quality of food there!

Fun fact: For Bak Kut Teh, the "teh" is actually not the broth, but rather the actual Tea. Traditionally it is eaten with pot of brew tea at the side to cut down the greasiness of the Pork ribs.

As a Singaporean i really love Mike's content. Prata is our comfort food. My fave is Prata Tissue. It is a tower of crispy prata drizzled with sugar. If you dont fancy the sweets, just tell them to omit that. The same can be found in Malaysia but they called it Canai

About not passing the food down. I agree. My friend's parents work at a hawker stall. Wants to retire but has no one to pass it down to. They feed 20 children and grandchildren who either live with them or come home daily to eat at their landed property. They make very good money and work half a day because it is always sold out. But the amount of work and heat is enough that their kids would not want inherit the business.
