It wasn't just commercial hunting that devastated the bisons numbers. The US government used to pay citizens to slaughter them on mass since the plains Indian tribes were completely dependent on them for survival .

I'm born and raised in western Alaska along the Lower Yukon River and you always keep an eye for brown bears and wolves. Once a 200 pound lone wolf entered my village over several weeks and picked off the dogs we have chained outside. One brave hunter finally took it down and its fur was pitch black and when layed out it was larger than anyone inside the village.

There are mtn lions in my rural neighborhood. The good/bad news is that those who approach humans are sick or elderly (unable to hunt normally). We have a chipping system to track their movements, and of course NEVER leave a pet outside!! Bears make me a little more nervous. Look for a cub. If you get between mama and baby... say your prayers.

When Chuck Norris does push-ups he's not pushing his body up, he's pushing the Earth down.

Bullsharks being up in q river where you are is not likely at all, there are plenty of ways to die that are more likely like a car crash. You would have to be in river at a time it had a bull shark there and be close enough to inspire an attack. The Rivers are overall vary safe and the occurring of a sighting of a Bull Shark is vary rare. Even Bull Sharks mainly stick to the ocean, the fact they can survive in fresh water only means that only a few have ever gone up the rivers to that extent. I am sure are more likely to be killed using a slip and slide on your back yard that attacked by a shark in a river in the interior of America.

I always laugh when it comes to the Moose and he says "One way to know of an imminent attack is it's hairs will stand up on it's neck"..... WTF?? DUDE! If you are close enough to a moose to see the hairs on its neck quick tip... YOU ARE TOO CLOSE!

I have eaten bear stew and bear chili... It's very very gamey... I don't think I'd want a steak or a burger as the taste would be too overwhelming but it makes a great stew... As for their status as dangerous animals, in Canada we have a saying: if it's white say good night. If it's brown just lay down. If it's black fight back.
Polar bears (white) are the largest carnivores on Earth (about the size of a 4 door car) if you run into one you're basically toast. If one is approaching you, it's hunting and there's no way you live unless you're armed with large caliber guns.
Grizzlies (brown) are slightly smaller than polar bears. If you encounter one, they may or may not attack but if they do, they're probably not hunting for food but rather asserting their dominant and neutralizing threats. So we're told to lay down on your belly (to protect your organs) and hope the bear leaves. It may still maul a person but you've got a 50/50 chance it won't and if it does attack and you don't fight back, there's a 50/50 chance it won't outright kill you.
Black bears are the smallest and most timid bears. They are very curious but also very skittish. If you run into one there's an excellent chance that you can scare it off by screaming, baring your teeth and waving your arms. Generally black bears are more scared than anything but they are known to stalk and kill people too....
No matter what kind of bear one encounters the common theme is DO NOT TURN AROUND AND RUN AWAY as this will almost always trigger their instinct to chase and kill their prey.

After living in the United States for 70 years I can say without a doubt the most dangerous animal is human. Yes, as to your question, I have eaten bear.
