    Ingredients:
    4 eggs
    2 medium potatoes,
    peeled and diced1 large onion
    , finely chopped2 tomatoes,
    finely chopped2-3 green chilies,
    chopped1 teaspoon
    ginger-garlic paste1 teaspoon
    cumin seeds1 teaspoon
    turmeric powder1 teaspoon
    red chili powder1 teaspoon
    coriander powder
    Salt to taste
    Fresh coriander leaves,
    chopped (for garnish)
    3 tablespoons oil
    Instructions
    :
    Prepare the Eggs:
    Boil the eggs until fully cooked, then peel and set aside.Fry the Potatoes:Heat oil in a pan over medium heat.Add the diced potatoes and fry until they are golden brown and cooked through.Remove the potatoes from the pan and set aside.Cook the Onion and Spices:In the same pan, add cumin seeds and let them splutter.Add the chopped onions and sauté until they turn golden brown.Add the ginger-garlic paste and green chilies, and sauté for a couple of minutes.Add Tomatoes and Spices:Add the chopped tomatoes and cook until they become soft and the oil separates.Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.Combine
    Ingredients:
    Add the fried potatoes to the pan and mix well.Cut the boiled eggs into halves or quarters and add them to the pan. Gently mix to coat the eggs with the masala.
    Simmer:
    Lower the heat and let the mixture simmer for a few minutes, allowing the flavors to meld together.
    Garnish:
    Garnish with chopped fresh coriander leaves.Serve:Serve hot with roti, naan, or rice.
