  • I love making pickles. In addition, this time of the year is great for pickling because of the abundance of fresh, local produce. The local farmer's market had a great sale on corn. So, I purchased more than needed. But no worries because having extra fresh corn gives me the perfect excuse to make SWEET CORN RELISH. In today's recipe, I will show you how to make this homemade relish and preserve it for eating at a later date. I will also show you how to make relish for immediate eating...relish for the refrigerator.

    SWEET CORN RELISH
    5 - 6 cobs of corn, shucked
    2 stalks celery, minced
    1/2 red onion, diced to size of corn kernels
    1/2 Vidalia or sweet onion, diced to size of corn kernels
    1 red bell pepper, seeds removed & diced to size of corn kernels
    1/2 cup + 2 Tbsp granulated sugar
    1 Tbsp salt (plus more for pot water...see STEP 1)
    2 Tbsp mustard powder
    1/2 tsp celery seeds
    1/2 tsp red pepper flakes
    pinch of turmeric
    3/4 cup water
    1 cup apple cider vinegar
    1. Bring a pot of lightly salted water to a boil. Also, fill a large bowl with cold or ice water.
    2. Add corn to boiling water and cook for 2 minutes. Remove corn and immediately place cobs into cold water. DO NOT TURN OFF STOVE. DO NOT THROW OUT POT WATER. Remove corn from cold water and set aside on a plate lined with paper towels. When corn is cool enough to handle, cut kernels from cob and place into a large bowl.
    3. Add celery, onions and bell pepper to the pot of boiling water and cook for 2 - 3 minutes. Strain in a sieve and add vegetables to the bowl containing corn kernels. Turn stove to medium-low heat.
    4. Discard pot water and dry pot with paper towels. Place pot back onto stove. Add sugar, salt, mustard powder, celery seeds, red pepper flakes and turmeric. Whisk constantly for 30 seconds to 1 minute. Whisk in water and vinegar. Bring to a boil and add vegetables. Combine and reduce heat to simmer.
    5a. IF COOKING TO PRESERVE & EAT AT A LATER DATE: Cook for 5 minutes. Ladle relish into hot, sterilized preserving jars. Fill up to 1/2 - inch of the top of each jar. Wipe rims with paper towels and screw on lid. Place relish in water bath and boil according to the canning jars manufacturer's instructions. Remove from water bath and rest on counter for 24 hours before labeling and storing. Refrigerate after opening.
    5b. IF COOKING TO EAT IMMEDIATELY...REFRIGERATED RELISH: Cook for 15 minutes. Ladle relish into hot, sterilized preserving jars. Fill up to 1/2 - inch of the top of each jar. Wipe rims with paper towel and screw on lids. Allow relish to completely cool before placing in refrigerator. Allow relish to sit in refrigerator for 24 hours before eating. Keep relish stored in refrigerator for up to 2 months.
    NOTES
    1. Sterilize all canning supplies according to manufacturer's instructions before placing relish into canning jars.
    2. If cooking relish to preserve and eat later, have a boiling water bath ready to place canning jars in once they are filled with relish and sealed.
    Once you start to make homemade relish and homemade pickles it is hard to stop making them. Once your family and friends taste a sample, you will start to get request to make them or request for your pickle and/or relish recipe.

      I literally spent all day yesterday chopping green tomatoes to make Southern Green Tomato Chow Chow Relish. It is tomato season in Southeast Louisiana and I am already getting request from family and friends for this delicious condiment.     This video was totally useless, because it didn’t provide timing for the corn. It was substandard as far as giving directions.

      Sorry you did not enjoy this recipe. As stated in the video, the recipe (directions) & its ingredients are in the video's description. This includes the timing to cook corn. The video's description also mentions to check the manufacturer instructions for canning water bath times due to not knowing the exact size or brand of canning jar(s) each individual uses while trying out this recipe. Different jars and sizes use different water bath times depending on what company makes the jar(s). To keep the videos short and so folks trying out the recipe do not have to go to a separate site to get the recipe, I post the long form directions to each recipe in each video description. I hope this helps if you are trying this recipe.
